I put a roast in the crock pot all day on low heat. I then put it in the fridge over night. The next day, Pre-prepare 2 diced tomato's, 1 onion and one jalapeno, if you like a lot of heat, add two. If you don't like a lot of heat, choose a jalapeno that has not striations on it. Then, I put 3 to 4 tbs of olive oil in a pan on medium heat and then put the roast in. After the roast is in the pan, turn heat on high. Use a fork to pull the meat off into strings until you've broken the whole thing up. When it's sizzling hot and you've got it all shredded up add your vegetables. Be careful because it's going to pop. Cook on high until the veggies start to become soft and then turn on low for about 3 minutes. This is a great filling for tacos, using corn tortillas or tamales. You can find a masa recipe on-line. DELICIOUS. Even my kids love them and they hate onions.
