I agree that it is unlikely that there are very many unpaid today as you have to leave a credit card. In order to get your card back, you have to close the tab. If you are speaking of years past when bartenders would settle weekly, then I can't even speculate that one, it could potentially be millions of dollars, but that's only a guess. Maybe you could try going into a few bars early in the afternoon to research this further, go to a variety of them. Sports bar, strip club, wine bar and a themed bar to get a good variety of information. Good luck.

No idea, but to do your essay, you will absolutely have to visit a lot of bars and ask and get information from the owners of the bars and get quotes and do the essay that way. If it is due tomorrow, it's no problem. Just make it all up like I did one time. Use fake sources. Put in fake quotes like, Albert Engleton of Third Street Pub & Tavern suggests "those clients who do not leave a credit card are very likely to attempt to leave without paying. On a busy Friday night, there are two bartenders, Bob and Frank, and if their backs are turned someone could walk out" (Smith 2005, 75-78).

Some are paid, some aren't...Usually there's some form identification, but I bet owners learn the hard way at first.
