Cool Shrimp Tacos

These delicious tacos are served cold. If you don't want to heat up your kitchen, but want warmed up taco shells, just heat them for a few seconds on each side over a grill. Use Homemade Taco Seasoning Mix instead of the purchased variety if you'd like.

INGREDIENTS:
1-1/2 cups sour cream
2 cucumbers, peeled, seeded, and chopped
1.25 oz. pkg. taco seasoning mix OR 2 Tbsp. Homemade Taco Mix
3 green onions, minced
2 avocados, peeled and chopped
1 Tbsp. lemon juice
1 lb. shelled devined cooked medium shrimp
12 taco shells
Torn butter lettuce leaves
1 cup chunky salsa
1 cup shredded Cojack cheese
PREPARATION:
In small bowl, combine sour cream, cucumber, half of the taco seasoning mix, green onions, avocados and lemon juice. In small bowl, toss remaining taco seasoning mix with the cooked shrimp and add to sour cream mixture.

Make tacos using shrimp mixture, taco shells, lettuce, salsa, and cheese. 12 tacos

If you can handle cooking a pound of pasta, you can make a pasta salad...this is my own recipe:

Cook the pasta (preferably orzo, but you can use any small pasta other than elbow macaroni).

While it's cooking, mix a batch of Good Seasons Italian dressing and cut up some meat and/or veggies (I use 1/4 lb. each deli ham and salami, but smoked turkey tastes good too).

Drain the pasta and rinse it in cold water, then put it in a large bowl.

Take 2 8-oz. packages of shredded cheese, one cheddar and one mozzarella, and add them to the pasta; mix.

Add meat/veggies and stir again.

Finally, add the dressing and stir to combine the whole thing.

This tastes good on its own, or as a side dish with grilled chicken or other meat if you omit the meat/veggies.
