Tater Tot Casserole...
1) Brown 1 lb. ground beef and drain fat. Season with salt and pepper (garlic or onion powder also if desired)
2) Place g.b. in 9X13 pan
3) Add a can of cream of mushroom soup, mix well
4) Place slices of American cheese on top of g.b. mixture until it is completely covered
5) Place tater tots on top of the cheese until it is completely covered
6) Bake according to the tater tot directions or until it is bubbly all over

Meat Loaf
2 pounds hamburger
2 eggs
3/4 cup milk
1 sleeve crushed saltine crackers
1 tablespoon Worcestershire
1/2 teaspoon salt
1/2 teaspoon dry ground mustard
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup chili sauce
3 carrots chopped
3 celery sticks cut in small pieces
Mix well, but do not over mix as it will make the hamburger tough. Spread in a loaf pan or a 9x13. Top with extra chili sauce. Bake at 350 degrees for 1 hour. To cut down on amount of grease in the pan, you can line the bottom with bread (bun halves work great also) then put the meat mixture on top.

LONDON BROIL
Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

Cheddar Burger Mashed Potato Bake
Makes 8 servings
Ingredients
2 pounds ground beef
1 medium onion, chopped
1 jar (1 pound) RAGî Cheesy! Double Cheddar Sauce
2 teaspoons dry mustard
4 cups prepared mashed potatoes
Preheat oven to 425°F. In 12-inch skillet, brown ground beef over medium-high heat; drain. Add onion and cook, stirring occasionally, 2 minutes. Stir in Ragú Cheesy! Double Cheddar Sauce, mustard and, if desired, salt and ground black pepper to taste. Simmer uncovered, stirring occasionally, 3 minutes or until heated through.
Turn into 2-quart casserole; evenly top with mashed potatoes. Bake uncovered 25 minutes or until potatoes are lightly golden.
Chili Corn Wraps
Makes 4 servings
Ingredients
4 large flour tortillas
1 tablespoon vegetable oil
1 medium onion, chopped
1 green bell pepper, diced
1 pound lean ground beef or turkey
2 tablespoons TABASCO® brand Green Pepper Sauce
1 tablespoon chili powder
1 teaspoon salt
1 (11-ounce) can corn, drained
1 (4-ounce) jar diced pimentos, drained
1/2 cup (2 ounces) shredded Monterey Jack cheese
Preheat oven to 375°F. Wrap tortillas in foil; place in oven 10 minutes to warm. Heat oil in 12-inch skillet over medium heat. Add onion and green bell pepper; cook 5 minutes or until tender-crisp. Remove vegetables to plate with slotted spoon.
Add beef to drippings remaining in skillet; cook over medium-high heat until well browned, stirring occasionally. Stir in TABASCO® Green Pepper Sauce, chili powder and salt; cook 1 minute, stirring frequently. Remove from heat. Stir in vegetable mixture, corn, pimentos and Monterey Jack cheese. To assemble wraps, place 1/4 of mixture on each tortilla; roll up tortillas, tucking in sides.
Esperanza's Enchiladas
Makes 6 to 8 servings
Ingredients
1 cup vegetable oil
12 corn tortillas, cut into 1-inch pieces
1-1/2 to 2 pounds ground beef
1/3 cup finely chopped yellow onion
1 can (10-1/2 ounces) enchilada sauce
1 can (8 ounces) tomato sauce
1/4 cup water
1 envelope (about 1 ounce) taco or enchilada seasoning mix
2 cups (8 ounces) shredded mild Cheddar cheese
2 cups (8 ounces) shredded Monterey Jack cheese
1 can (6 ounces) black olives, drained and chopped
6 green onions, finely chopped
Sour cream (optional)
Guacamole (optional)
1. Preheat oven to 350°F.
2. Heat oil in medium skillet over medium-high heat. Add enough tortilla pieces to fill, but not crowd, skillet; fry until crisp. Remove with slotted spoon; set aside to drain on paper towels. Repeat with remaining tortilla pieces.
3. Cook and stir ground beef and onion in large skillet over medium-high heat, stirring to separate meat, until beef is browned; drain fat. Add enchilada sauce, tomato sauce, water and taco seasoning mix. Bring to a boil over high heat. Reduce heat to low and simmer 20 minutes.
4. Combine beef mixture with 2/3 of fried tortilla pieces in large bowl; transfer to 13Ã9-inch baking dish. Top with remaining 1/3 of tortilla pieces, cheeses, olives and green onions. Bake about 5 to 10 minutes or until cheeses are melted. Serve with sour cream and guacamole, if desired.
Hint Save some time by substituting a 1-pound bag of your favorite tortilla chips for the fried tortillas. For extra zing, substitute chorizo (a spicy Mexican sausage) for the ground beef.
