I love potato pancakes with apple sauce. Yum!

Apple Meat Loaf

2 cooking apples or 1/2 cup apple sauce
1 1/2 lbs ground beef
1 1/2 cups soft bread crumbs
1 onion, finely chopped
salt and pepper
1 tsp. Worcestershire sauce
2 eggs

Topping:
1/3 cup catsup
2 tblsp. maple syrup(Pancake syrup works)

Peel, core and grate apples(applesauce is easier), and combine with ground beef, onion, bread crumbs and seasonings. Beat eggs and add to mixture. Press into loaf pan. Combine topping ingredients and spoon over meatloaf, bake at 325F for 1 1/4 hour.

I've combined the topping right into meatloaf as well. This is a very moist meat loaf with an excellent flavor. Makes great left-over sandwiches next day as well.

Cocoa Applesauce Cake

Ingredients

2 cups thick applesauce
3/4 cup sugar
1/2 cup brown sugar
4 egg whites (or substitute for 2 eggs)
3 tbsp cocoa
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon

TOPPING:
2 tbsp sugar
1 tsp cinnamon


Instructions

Mix dry ingredients together. Add wet ingredients. Mix lightly. Put into a lined or sprayed 9"x13" pan. Sprinkle with topping. Bake about 40 minutes at 350, till a toothpick inserted at the center comes out dry. Freezes well.



Horseradish Applesauce

Ingredients

(1 servings)

1 c Applesauce
4 tb Horseradish


Instructions

Stir together and serve with ham, pork, or veal.

SPICED APPLE SAUCE COOKIES

1/2 cup shortening
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 cup unsweetened applesauce

Cream together the shortening and sugar. Add egg; mix thoroughly.
Sift flour, then measure. Sift measured flour with salt, baking soda, baking powder, and spices.

Add dry ingredients to creamed shortening and sugar, alternating with applesauce, then dry ingredients, etc, until all is combined.

Drop by tablespoonfuls onto lightly greased cookie sheets and bake in a preheated 375°F oven 8 to 10 minutes or until golden along edges.

you can substitute apple sauce for oil in cake recipes... you never taste it afterwards, and it is a healthier alternative. (same with mayonaise).

did you know that you can use applesauce instead of oil when baking a cake-- use same measurements and it tastes super moist and cuts down on the calories too!!!
