I have one lb of ground beef and some veggies, bread, rice, pasta, potatos, tortillas, seasoning. We don't want spaghetti, meatloaf, or hamburgers. Any ideas?

Shepard's pie.
cook all the things separately.
Then put them in layers in a deep baking dish.
For example, put the hamburger on the bottom, then a layer of mashed potatoes right on top of the hamburger. then a layer of veggies on top of the potatoes, then a layer of rice, then the pasta.
Put it in the oven and bake it for 20 or 30 minutes
at 350.
take it out and quickly cover it with cheese.
Cover the dish with some kind of lid and let it set for 5 minutes.
Then DIG IN!
Its a great bachelors dish. Quick, effortless, and you'll have leftovers for days.

Taco Casserole
On the side I serve shredded lettuce and chopped tomatoes, maybe extra onions chopped up for onion lovers, some sour cream, and for those who want more heat, picante sauce and jalapenos.

1 medium bag Taco or Nacho flavored tortilla chips, crushed
1 1/2 lbs hamburger
1 pkg. taco seasoning
1 can cream of celery soup
1 can cream of mushroom soup
1 can Rotel tomatoes (spicy)
2-3 cups shredded cheddar cheese

Fry hamburger, drain, and add taco seasoning with a little water; simmer 5 minutes.

Mix soups and tomatoes together (do not dilute soups).

Spread half the chips in bottom of lightly greased 13x9-inch baking pan. Put a layer of the hamburger mixture on the chips, then a layer of the soup mixture. Cover with the cheese. Top with the last of the crushed chips Cover and bake at 350F for 20 minutes; uncover and bake 20 minutes longer.

To make ahead:
The chips turn to mush if you don't bake this right after assembling it, but what I do is bake it ahead, refrigerate it, then everyone heats up their serving in the microwave. The chips stay crunchy for a day or two after baking, maybe longer

how about beef quaesadilla with spicy vege rice?

beef quaesadilla
Brown the beef with some onion and capsicum.
Oil the tortilla and put the beef mix plus some grated cheese on one side and then fold over. Bake it in a hot oven till crispy and brown.
Serve with shredded lettuce and a tomato salsa plus a few spoon fulls of rice (fried with spices and finely chopped veges)

Yum. Even better with shredded chicken

You can make home made hamburgers! Mold the ground beef together to make a great hamburger!
