My Mother's Pie Crust Recipe:

OLGA's PIE CRUST
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies. Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.

SHOO FLY PIE
1 large egg yolk
1/2 cup molasses
3/4 cup water -- boiling
1 teaspoon baking soda
1 cup flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon cloves
1/2 cup brown sugar -- packed
1/2 teaspoon salt
2 Tablespoons shortening
1 pie crust (9 inch) -- unbaked
Beat the egg yolk in a small bowl. Blend in the molasses. Add the boiling water with the soda dissolved in it. Set aside.
Combine dry ingredients with shortening and work into crumbs with fingers.
Put liquid into pastry shell and top with crumbs.
Bake in a 400 degree oven for 10 minutes, then reduce heat to 325 degrees and bake 35 minutes longer.

Authentic Pennsylvania Dutch Shoo Fly Pie

Ingredients

(8 servings)

1/2 c Baking molasses
1 Egg yolk
1/2 ts Baking soda
3/4 c Boiling water
3/4 c Flour
1/2 c Brown sugar
2 tb Butter
1/8 ts Nutmeg
1/8 ts Ground ginger
1/8 ts Ground cloves
1/2 ts Cinnamon
1/4 ts Salt
1 Pastry for 9-inch pie


Instructions

Line 9-inch pie plate with pastry. Mix molasses and egg yolk. Dissolve soda in boiling water and add to egg and molasses. Set aside. Stir dry ingredients together, mixing well. Cut in shortening until mixture looks like coarse crumbs. Pour molasses into pie shell. Sprinkle crumbs evenly over top. Do not stir. Bake at 450 degrees F. 15 minutes, then reduce heat to 350 degrees F. and bake 20 minutes longer. Cool and serve. Serves 8.

WET SHOE FLY PIE

1 c. brown sugar
1 c. molasses
1 egg, slightly beaten
1 tsp. soda
1 tbsp. flour

Mix all. Add 2 cups boiling water. Chill completely. Pour into 2 pie shells (8 inch) and then mix: 1 c. brown sugar 1 tsp. soda 1 pinch of salt 1/2 c. shortening
Combine the above ingredients. These are the crumbs for on top of the shoe fly pie. Sprinkle these on the top of the liquid. Bake at 350 degrees for 35 to 45 minutes.

My Grandma's Shoo-Fly Pie

INGREDIENTS:
1 (9 inch) pie shell
1 cup molasses
3/4 cup hot water
3/4 teaspoon baking soda
1 egg, beaten
1 1/2 cups all-purpose flour
1 cup packed brown sugar
1/4 cup shortening

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
To Make Bottom Layer: In a medium bowl combine molasses, hot water, and baking soda. Stir well. Whisk in beaten egg. Pour mixture into pie shell.
To Make Crumb Topping: In a medium bowl combine flour and brown sugar. Mix well, then cut in shortening until mixture resembles coarse crumbs. Sprinkle on top of molasses layer.
Bake in preheated oven for 15 minutes. Lower temperature to 350 degrees F (175 degrees C). Bake an additional 30 minutes.

Shoofly Pie

Crumbs
1 cup flour
2/3 cup lught brown sugar
1 Tbsp. shortening
Mix flour and sugar. Cut in shortening. Take out 1/2 cup crumbs and set aside.

Bottom part

1 egg, slightly beaten
1 cup molasses
1 cup boiling water
1 tsp. baking soda
1 9" unbaked pie shell

To the larger portion of crumb mixture add egg and molasses. Blend in 3/4 cup boiling water. Dissolve the baking soda in remaining water and add last.
Pour in the pie shell and sprinkle the reserved crumbs on top.
Bake at 425 for 15 minutes and reduce temp. to 350 and bake for 40-45 minutes more.
