Canned chicken, mayo or miracle whip, sliced celery, red onion, the trick with the onion is not to dice it but to grind it on that one part of the cheese slicer no one uses. you just want the onion juices and a little pulp and some salt and pepper.
Canned tuna, mayo or miracle whip, diced pickles and a little pickle juice from the jar, hard boiled eggs and diced apples, yes, diced apples. make sure they are small and diced for the right consistency. add a little salt and pepper.

Tuna Salad Recipe
INGREDIENTS:
2 large tomatoes, cut in quarters
1 red bell pepper, cut in matchstick strips
1 green bell pepper, cut in matchstick strips
1 small onion, sliced in rings
1 can (6 1/2 or 7 ounces) tuna in vegetable oil
4 teaspoons olive oil
2 teaspoons wine vinegar
1/2 small clove garlic, finely minced
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dry mustard
12 pitted black olives, chopped
PREPARATION:
Arrange tomato quarters on a salad serving platter; place pepper strips and onion rings in center. Drain oil from tuna into a small jar; flake tuna and arrange in center of platter. Make salad dressing: add olive oil, wine vinegar, minced garlic, salt, pepper and dry mustard to tuna oil in jar.
Seal tightly and shake vigorously to blend. Sprinkle over tuna salad platter. Sprinkle chopped olives over the salad.
Tuna salad serves 3 to 4.

San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

Tuna salad is scrumptious!
Throw in a can of tuna, some red onion, cherry tomatoes, sliced cucumber, a can of any beans of your choice and drizzle with some extra virgin olive oil and balsamic vinegar, some cracked pepper and a little salt. Toss through and devour! YUM!
