The temperature/thermostat for your oven may be off, get an oven thermometer to check the accuracy. My oven was off by about 50 degrees for awhile so if I needed a 350 degree oven I set it for 300. Yours sounds like it may not be hot enough, mine was too hot. Good luck!

Different flour or expired ingredients, such as baking powder, or humidity in your baking soda... It could aslo be your oven temp is too high. It could do that if the element is slightly off in your oven, not a chef mistake...

Things like baking soda and baking powder get too old to use. (Another reason to check expiry dates on cake mixes as well.) Check the expiry dates. Throw away old baking powder and use old baking soda to clean your drains.

use fresh yeast. if your yeast is dead your cake won't rise
