1. Even if you don't SCUBA (and definitely if you do) at least snorkel at the Molokini crater.
2. Mountain bike down Haleakala. Do NOT use one of those "convoy" companies-- go to Haleakala Bike Company- where they take you to the top with great bikes and let you come down at your own pace (like super fast? you get to do it. Want to go slow and leisurely? You can do it that way too- stop at the botanical gardens on the way down, eat Mexican food at the bottom. you get to stop and snack, rest, or just enjoy the view of the entire west coast of the island)
3. a Luau of course. We went to the one at the Hyatt Regency in Lahaina because we were told it was the best. it did not disappoint (have heard the Marriott further south is very good too)
4. Road to Hana. buy one of those silly cassette tape tours and take your time. High points for me: waterfalls and the botanical gardens (huge)
5. Like seclusion? Drive around the north shore from Lahaina to Kahului. There are some secluded coves and just a nice drive if you like that sort of thing. This was a great experience with my husband. You can't do this if you're in a hurry tho (we ran into a herd of cows on the road!)
6. Iao Needle (state park?) Excellent and a cool japanese garden nearby as well.
7. Pineapple Plantation tour
That's in order. Pick up some 'tourist' papers when you get there- there is actually more than 100 different things to do. You can't do it all in a week, but you'll want to go back anyway

If you go to Maui, you gotta do the downhill bike ride. I don't recommend the sunrise one because you have to get up at 3:00 AM to get started up the mountain and its cold up there that early. If you are a romantic do it, but otherwise no. There are different bike companies and some don't take you all the way to the top, and some don't guide you back down. You can come down by yourself, there's only one road with just a little traffic, but if you are squeamish about riding in the street, a company that accompanies you down will help watch the traffic for you. I have been twice and prefer Maui Downhill to the others. These companies have web sites They will pick you up at your hotel, take you to their shop to pick out a wet-suit (for the cold and mist/rain shower maybe) and gloves and helmet; then take you up the mountain; then follow your group down so they can block traffic for your ride; then afterwards take you back to your hotel. Expect this activity to take 75-80% or more of the day.

Also in Maui, The Road to Hana is a great drive (you need a rental car). It’s a 30 mile winding road that takes 4 hours to drive. Its like driving through the jungle; has a bunch of one lane bridges. Then drive through Hana to the Seven-Pools attraction and go for a swim.

Lahaina is just a small town with some shops and restaurants. There is a huge Banyon tree in the town square that takes up the whole square. Otherwise there is not really anything to do there except shop and eat.

There is also a winery in MAui if you like to visit wineries.

I gave you the web site for Roberts which is a good tour company that I have used a couple times.

Old Lahaina Luau, Sunrise at the top of Haleakala, which means, house of the sun. Hiking through the crater, 1/2 day. Pick up a hiking book or go w/ others on tours, Maui is magnificent. Get out on the water on a catamaran or sailbowt, or sunset dinner cruise. Walk the 2 miles of about 7 hotels, there is a sidewalk on the beach that leads to all of them w/shops & restaraunts, waterfalls & waterslides & rope bridges across the pool @ the Hyatt. Westin is beautiful.Drive up North past Kapalua Bay Hotel & Ritz Carlton, both have great beaches & snorkeling. Honolua Bay is a fish reserve, you can take a sailing tour from Lahaina or Kaanapali there& they'll also make breakfast or lunch. Lots of fish & vibrant coral reefs. You can drive North, it's a very scenic drive, you'll end up at the airport. It's a 2hr. drive. On the other side of the island go to Paiea. & North, watch the windsurfers, drive upcountry to Olinda Rd. Hard for me to explain get on the internet & browse the sites. Download a map & circle the places I've reccommended.Fantastic restaraunts all over the island. Mama's Fish House,Whaler's Village in Kaanapali,Pacific'o on the beach in Lahaina (highly eccommended. Kimo's, Kapalua Grill & Bar,Leilani's On The Beach,

I've been to Maui 3 times. I did the drive to Hana thing once and would NEVER do that again. It took forever to get there and all the scenery you can see most of the time is a zillion-foot drop off straight to the ocean below and truckloads of bamboo trees. You're driving down this very narrow road with one lane bridges on the side of a sheer cliff wondering; if someone comes around the corner in the opposite direction how are you going to get around each other without one of you driving off the cliff to your doom?? It was the most nervewracking drive of my life, and also a very boring drive.
Lahaina is awesome. You could be busy for days just walking around Lahaina taking in the sights and smells. The very most awesome thing I've done in Maui is to go to the play called 'Ulalena in Lahaina. It's a bit spendy to see but it's absolutely awesome!! http://www.mauitheatre.com/
It's so beautiful and after I saw it it's all I could talk about for days! So worth it. I've lived on O'ahu for 4 years, visited Maui 3 times, and been to Kauai once and the play 'Ulalena was the neatest thing I've ever seen in all of Hawaii!
A short bus ride from Lahaina is Whaler's Village shopping center. Check out the whaling museum. That's pretty cool.
Parasailing was fun too. Maui Ocean Center was fun but it was so long ago I don't remember much about it. Sorry. :(
You can wait to plan your activities until you get there and shop around for the best deals. There are booths every block where you can book tours and activities in Lahaina but not all of them have the same things. Some may have snorkeling and helecopter tours but not tickets to 'Ulalena, or vice versa. Whater you do, plan on booking things ASAP when you get there because some things are booked full days or more in advance. 'Ulalena is usually booked full 2 days in advance- or at least all the good seats are! DO shop around though. We found out one time that it would have been cheaper to just go buy tickets for something at the location, rather than book through an agent. We wound up paying like $30 extra. I can't tell you who's the cheapest to book through because it's different for different combinations of activities and different times of year. Your best bet is to shop around yourself after you decide exactly what you want to do and when.
If you're going with a significant other, I highly reccommend a dinner cruise. Spendy but sooo romantic! You get to watch the sunset from on the ocean while eating dinner with your honey. Can't beat that!!! :)
Have fun!

Wow how exciting. My husband and I (who was at the time my boyfriend) went to Maui in 2000 and a must go eating spot is "Fish and Game". They have the best roasted lamb on the island. Also some activities that you could do if you are going as a couple is getting a couple massage or even if you are alone getting a Spa treatment. The people from Maui are so sweet and welcoming. We also went to the black sand beach...that is a must...nice spot to have picnic or just walk and take photos. The best Luau was at the Kanopahi Hotel...I believe that is the correct spelling...also try to go to the Luau held at the Marriott Hotel.

I second biking down Haleakala. I did it two years ago. It was soooo much fun! I'm sorry I don't remember where we got out tickets.

The drive to Hana was beautiful. If you get motion sickness, I suggest taking medication before you start the route. There are a lot of narrow roads and hairpin turns.

Wish I could come...have fun! You won't want to leave!

besides the things you mentioned...take a helicoptor ride, go see the Iao Valley and Iao Needle, and on the way to Hana, there is a black sand beach (Wainapanapa State Park)that you should stop off to see, and a cavern tour as well. Can't remember the name of the cavern, but it is the ONLY cavern in Hawaii so you can probably find it on the web.

Don't miss the "Road to Hana".....it is a site seeing trip that usually takes a full day, but it is well worth it! You will see sites that you would never see on your own.....the terrain, animals, water falls, the rainforrest.....simply beautiful! You also need to take a helicopter ride....seeing the volcanoes from the sky is AWESOME!

Bicycle down the volcano. It was my most favorite thing to do when we went.
There's also snorkeling at Molikini (not sure of the spelling on that) and you might even see some sea turtles
