I love garlic, I just froze 2 1/2 pounds of garlic that I roasted myself. I put it in everything. Try this recipe.
Roasted Garlic/Chicken Soup Recipe
A nice soup to serve for lunch followed by a light salad. This soup is for garlic lovers! If you wish the meal to be lighter just leave out the chicken.
2 heads garlic, whole,unpeeled,just the tops cut off the heads to expose the tip of the cloves
1 chicken breast, thinly sliced
4 1/2 cups chicken stock
2 tablespoons butter
1 tablespoon chopped fresh dill weed
3 slices whole-wheat bread, cut into 1" cube
1/4 cup dry white wine
salt and pepper
1/2 cup grated provolone cheese
Place garlic heads,upright,in a shallow 8 cup cassarole, ovenproof, dish.
Pour a 1/2 cup of chicken stock over the garlic.
Bake in 350F degrees oven for 1 hour.
Allow buds to cool, then squeeze the garlic puree from the skins.
Meanwhile, melt the butter in a large skillet,stir in the dill.
Add bread cubes and toss, cook until cubes are crisp (about 5 minutes), set aside.
In a saucepan combine the 4 cups of chicken stock, chicken, garlic puree, wine, salt& pepper.
Bring to a boil.
Preheat the broiler.
Pour hot soup into 4 oven proof soup bowls.
Add croutons, sprinkle with the cheese.
Broil for 3 minutes or until the cheese is bubbly and serve.

Oh my, yes! I love it. I eat it raw with anything "onionable" lol. I take whole cloves of garlic, cut off the the tops, drizzle with olive oil and sea salt, and bake at 350 till pretty and golden. Use to make garlic mashed potatoes, garlic butter, just squeeze the bulb out of the skin.

Garlic is great and great for you. I love roasted garlic. In case you have never tried this I will list the steps.
Preheat oven to 350
Separate the cloves from one head of garlic. Take the skins off each clove of garlic. Take a large piece of foil and place garlic cloves in the foil. Drizzle with olive oil, sprinkle with kosher salt and ground black pepper. Wrap the foil very loosely around the garlic to make a tent. Place in oven for one hour. Remove from oven and when cool enough to touch, eat. It's kinda' sweet. I love it on a slice of buttered french or italian bread.
Now, take a jar with a lid. Place the leftover garlic that you haven't eaten and place in jar. Pour in canola oil (olive oil will become murky and harden in the fridge) to cover the cloves. Add a squeeze of lemon or lime juice or just a tbs of vinegar to the jar. Throw in some dried herbs, rosemary, thyme, basil or whatever you like (I like tarragon). Place lid on jar, place jar in fridge. Will keep up to 2 weeks. Have one with your evening meal every night for your health.

peperontino pasta is the best
boil pasta
slice garlic and chop red pepper.
put olive oil in a frying pan and add garlic and red pepper.
take some hot water from pasta and add it to the frying pan.
mix well.
add pasta and salt.

Garlic isextremely versatile. its in almost every meal. Use it chopped in marinades, dressings. Ur use it to flavor some oil before sauteeing. Its even great grilled and then smashed for more of a unique flavor.

I usually only use 1 or 2 cloves at a time (2 small) so as not to overpower any other flavor, and so as not to smell funny the next day. I usually mince it and sautee it or fry it with meat - hamburger or chicken. Trying to get brave enough to use it with salad dressings! Oh, and in salsa one half clove to one clove is plenty, unless you are making a big batch.

i liek to chop up garlic into lil bits and use it on chicken or hamburger when im grilling! along with other seasonings it rocks!

love it! especially in pastas etc... but it's important if you put it with meat etc in a skillet to add it right before you're done browning the meat or it will get a bitter taste!!!use whole peeled cloves to bake roasts and chicken also!mmmmmm
