This is the best recipe, I make this all the time, grew up on it.

1 small box elbow noodles, cooked, not rinsed
3 to 4 stalks celery, diced fine
1 small green pepper, diced fine
5 to 6 sliced green onions
2 carrots, diced fine
1 small can of peas
mayo, not miricle whip
3 hard boiled eggs, diced fine

*****you could add a can of drained tuna or a bag of baby shrimp to this*****

Add it all, season with salt and pepper, chill for at least 2 hours before serving.

I hope you like it.

This is my favorite. Been making it for years. With no mayo.

Macaroni Salad
Serves 5
2 cups cooked elbow macaroni
11/2 tbs lemon juice or 2 tbs vinegar
1 tbs canola oil
1 tsp grated onion
1 cup celery, diced very small
1 cup parsley, minced
1/2 cup black olives, chopped small
Salt and pepper to taste
3 tbs sour cream
2 tbs pimiento, chopped

Place macaroni in large bowl. Beat together well the lemon juice (or vinegar) and canola oil. Add to macaroni. Chill for several hours. After chilling, toss the macaroni with the remaining ingredients.

As with most food I make, all of the above are guidelines. I usually follow the recipe the first time and if I like it, I'll tweak it a little the next time.

Good luck and good eating.

My fav version is with tiny bits of ham, cheese, boiled egg & green onions (in a base of small macaroni, mayo, mustard & relish).
My neighbor swears his wife's is the best mac salad in the world! She uses shrimp, sliced olives & diced onions in a base of mac w/salad dressing (no mustard or relish).
There are lots of things you can put together in mac salad...

You can add tuna and frozen peas, chicken, ham& cheese& brocolli, carrots, celery, red or green or yellow peppers to the mayo and relish reciperecipe.Using shell mac is cute and it holds the dressing better.
There is another one with the red and green spiral mac and a vinegrette, but I don't have the recipe, I do not care for it. Try allrecipes. com, they probably have one.
Enjoy your mac salad.
