It seems if you say it once, and they sneeze again, and again, do you keep blessing them?

I will usually say Bless you after the first sneeze then wait until they are done and say Bless you again.

When I sneeze it is never just one. People normally wait until I am done to say Bless you.

if they sneeze really fast usually i say bless you times the number of sneezes but if there's a time gap between each sneeze then i say bless you for each one.

thats actually... an interesting question
I guess you can wait untill they're done with their sneeze attack and then say it OR if the person is tricky and there is a pause b/t the first and second and then a bunch of sneezes, and you find yourself apologizing more than once...make light of it and say it everytimne then make a joke abt it....hope that helps

if they are sneezing several times in a row and I didn't say
'Gesundheit' right after the first time (like they are sneezing fast) I wait until they are done or as soon as there is a break

but usually once - occaisionally twice - after the first and after the last

Bless them the first time, if they continue say politely "Let me know when you are done, I don't want to interrupt"
When they finish, bless them again.

i would keep saying bless u every time they sneeze but i will try not to sound exasperated or annoyed

Actually, proper etiquette doesn't allow you to say "Bless you". You're not supposed to emphasize it! But I always do it (I mean, it depends if I know the eprson!). So, for your question, I would say that I say it the first time.
