The most common Black and Tan in the United States uses Guinness and Bass. The stout is "layered" on top of the ale.

To prepare a Black and Tan, first fill a glass halfway with the ale, then add the stout. The top layer is best poured slowly over an upside-down tablespoon placed over the glass to avoid splashing and mixing the layers. A specially designed black-and-tan spoon is bent in the middle so that it can balance on the edge of the pint-glass for easier pouring.

One thing to point out - there are different camps on what a Black and Tan is.

Some people believe the Black and Tan is Guinness and Bass. But others believe the Black and Tan is Guinness and Harp. Guinness promotes a B/T with Bass, but I have heard that Bass isn't available so much in Ireland anymore, so Harp is often used. Some people call the Guinness/Harp combo a Half-and-Half.

Two ways to pour one:

Hold your pint glass at an angle, and fill just over halfwaywith Bass. Very, very slowly pour the Guinness, letting it hit the side of the glass. This is the quick and dirty method, you may have to wait for it to settle a bit to have that "look".

The other way is to take a spoon, turn it over so that the bottom is up, then pour Guinness over it - once again, very slowly. Many people bend the spoon so that the bottom can be lowered into the glass flatly. You can then keep the spoon around for future use as your B/T maker.

I personally always like someone who has their B/T spoon ready and waiting.

All I know is if you are around a bunch of Irishmen, never order a B/T with Bass. You are mixing the English with the Irish. I saw someone get the snot knocked out of them on St. Patty's day for doing this.

Order it with Guiness and Harp.
