These are easy & so awesome!! They are super-rich though & very filling...
Lisa's Turtle Bars

1 14 oz. package caramels
1/2 Cup milk
1/2 Cup melted butter
1 Box German chocolate cake mix
1 Cup chopped pecans
1 12 oz. package chocolate chips

Combine caramels and 1/4 cup milk in a saucepan. Cook over low heat, stirring constantly until caramels are melted; set aside. Combine melted butter, dry cake mix, nuts and 1/4 cup of milk and mix. Press half of mixture into greased 13x9 inch pan. Bake at 325 degrees for 6 minutes. As soon as crust is baking, remove from oven and immediately sprinkle chocolate chips on top. Spread caramel mixture over chocolate chips. Sprinkle remaining cake mixture over caramel. Return pan to oven and bake at 325 degrees for 15 to 18 minutes. Cool and then cut into squares. Delicious!!

Well, this is something I just tried last night.

It is inspired by Bananas foster, the New Orleans favorite. But, I am not old enough to buy rum. Plus, I really don't dig on the flavor it provides.

Just slice up a banana into coins.

You will need:
1 tsp of Vanilla Extract
2 tbsp of Butter or Margerine
1/8 cup of Sugar, be it brown or white
1/2 tsp Cinnamon

Put these ingredients in a saucepan over medium heat. Once the butter is melted, add the bananas. Stirring frequently, continue to saute over the heat for about 5 minutes. Turn the heat down to low.

Here is where the change happens.

If you want to eat the banana sauce over ice cream, pour and serve.

If you want to eat it in a tortilla, add a dash of flour to thicken the sauce up a bit. Roll into the tortilla after the sauce has cooled and thickened enough.

As it goes for additions, drizzling caramel over the top of either choice is a great idea.

I have also been thinking about adding cream cheese to the tortilla approach, for a thicker and creamier type of filling. Almost cheesecake foster.

Tres leches

For the spongecake:
6 eggs, separated
2 cups sugar
2 cups sifted all-purpose flour
1/2 cup whole milk
2 tsp. baking powder
1 tsp. vanilla extract
For the cream:
1 can Evaporated Milk
1 can Sweetened Condensed Milk
1 cup whipping cream
For the topping:
3 egg whites
1 cup sugar
3 cups water
1/4 cup of light corn syrup, such as Karo

Make the spongecake: In a the bowl of your mixer place the egg whites. Beat at low speed first and then increase the speed to high until soft peaks form. Add the sugar gradually, letting it dissolve well before adding more, and beat until firm. Add the egg yolks one by one, beating well after each addition. Now mix the flour with the baking powder and add to the mixture alternating with the milk. This operation has to be done quickly or the batter will loose the lightness in it. Finally, add the vanilla. Pour this batter in a large rectangular pyrex,greased and floured, and bake for 25 to 30 minutes in a 350°oven.

While this is baking, prepare the cream. Very simple: just mix everything together in a blender and pour over the still warm spongecake.

The frosting: Place the water, sugar and corn syrup in a saucepan and let boil. Meanwhile, beat the egg whites to soft peaks. Add the hot syrup in a string and continue beating at high speed until all the syrup has been added. Beat until no longer warm. To serve the Tres Leches: Once the soaked spongecake is at room temperature you have to let it cool in the refrigerator. Then you can spread the frosting and put back in the cold. This is supposed to be served very cold. You can decorate this Cake with Silver dragées or you can also make some caramel and let some strings of it just casually over the frosting.

Strawberry shortcake and vanilla ice cream is one of my favorites.
Clean and slice strawberries (usually one of the packaages from the store is more than enough)
Pour over berries about a tablespoon of honey, it makes them last longer and it taste and is healthier than sugar.
There are plenty of low fat sponge cakes to choose from in many grocery stores. Once you have chosen, place a cake in a bowl and cover with as much ice cream as you see fit.
I have discovered hagen dass has a lowfat vanilla ice cream that is delicious.
Once you finish adding the ice cream add plenty of the sliced strawberries and top with a lowfat whipped topping.
Honestly, if you stick to the low-fat idea this simple throw together dessert is only about 200-250 calories. And you can change the fruit to peaches or change the ice cream to chocolate. Great during the summer.

Unwrap any flavor ice cream sandwiches and lay in a 9x13 pan. Cover with Coop Whip and sprinkle Heath bits or whatever else you want on top. Freeze until ready to serve. A box of 12 sandwiches fit perfectly. You have to maybe cut the 12th one in half if I remember right. When served it is really hard to tell what it is. Very easy and good.

CHOCOLATE CAKE

this is what u need..

2 cups all-purpose flour
1/2 cup cocoa
1/2 teaspoon salt
1/2 cup shortening
1 3/4 cups sugar
3 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 tablespoon hot water
1 cup cold water

this is what u have 2 do

1.Sift together flour, cocoa, and salt.
2.Cream shortening and sugar together until light and fluffy.
3.Beat in eggs, one at a time.
4.Stir in the vanilla.
5.Dissolve baking soda in the hot water.
6.Stir into the creamed mixture.
7.Add dry ingredients to creamed mixture alternately with cold water.
8.Beat well after each addition.
9.(I make 5"dumps":dry- water- dry- water- dry).
10.Bake in a greased and floured 13" X 9" X 2" pan for 20-25 minutes at 350F

Turtle Cheesecake!

INGREDIENTS:
1/4 cup fat-free cream cheese, softened
1 tablespoon fat-free caramel topping
2 Quaker® Chocolate Crunch Rice Cakes
2 teaspoons chopped toasted pecans
2 teaspoons fat-free chocolate syrup


DIRECTIONS:
Stir together cream cheese and caramel topping in small bowl until smooth.
Spread mixture over Chocolate Crunch Rice Cakes, dividing evenly.
Sprinkle with pecans; drizzle with chocolate syrup.

Check this out its just like my Granny used to make, you can do whip cream topping if the meringue doesnt turn out...
I like to eat it still warm and its soooo yummy!
