put ur slices of bread into a food processer and switch on, keep it going for about 10minits to get them really fine, put them in a pre heated oven at 180'c for a minite to get them a little crsper.
If there for goujons or anything like that, take a pastry brush n brush a little liquid egg (egg whisked in a bowl) onto ur fish (or whatever) then roll in bread crumbs, this will help the breadcrumbs stay put.

To add extra flavour to ur bread crumbs season them (salt and pepper) b4 u put them into the oven to crisp up, just after uv food processed them

whatever u do dont use toast - big burnt mess
or a cheese grater - ur gona have a limp bit of bread in ur hands u cant grate bread! and if ur using to cook n put in the oven it will go black if its been toasted

Everyone here will tell u to use stale bread, it really doesnt matter either way

Lay bread slices on a rack until the bread is dry--not "hard" but dry. Day-old bread works better than fresh. After an hour or so on the rack, crush with a rolling pin or other hard object. Alternatively, pulse in a food processor but be careful. It's easier to get "bread dust" using a food processor than bread crumbs ;~)

Depending on what use you have in mind, lightly toasting before crushing and/or adding seasoning might be appropriate. A variety of different flavors is possible using different bread types--sourdough, as one example, is excellent for breading.

Ingredients:
3 cups crumbs
2 tablespoons dry milk
1 tablespoon brown sugar
dash of salt & pepper
1 tablespoon dried parsley
2 teaspoons onion powder
1 teaspoon garlic powder
1 tablespoon Italian seasoning if you want the Italian flavor for the crumbs
1 tablespoon 100% pure virgin olive oil (optional)


Directions:

I "save" in an airtight container, all the crusts from my loaves of bread, especially the wheat! I dry them in the oven, on a low temp. and then grind them with one of those old fashioned food grinders. Of course, there are electric ones to use now, but I like the "action" on the old grinders. Add to crumbs: (to make approx. 1 qt.)

And 1 Tbsp Italian seasoning if you want the Italian flavor for the crumbs Also, if you want a slightly more moist texture, add 1 Tbsp 100% pure virgin olive oil

Toss bread crumbs with other ingredients.

I would recommend that before you get all crazy with the blender or food processor that you toast the bread slices first to make them crisp... Bread crumbs aren't mushy after all! Croutons work pretty well too!

Homemade Italian Breadcrumbs

1 loaf od stale Italian bread
1/2 cup Parmesan cheese
1 tbsp. Italian seasonings
1 tsp. garlic salt
1 tsp. black pepper
1/4 tsp. crushed red pepper flakes
1 tbsp. dried parsley flakes
1 tsp. dried basil
1 tsp. dried oregano

Process the bread in chunks til fine. Put the crumbs in a large bowl and add the other ingredients in, folding gently to incorporate. Divide between two quart zip-lock freezer bags. Store in freezer and use as needed.

Put some bread in a food mixer with the crusts removed turn it on after a few seconds you will have breadcrumbs

Just break up by hand into bits and peices ad leave on the counter for the day to dry out or put in the oven on super low heat. Maybe toss some garlic powder and dill on them.
