I'm not sure if you are actually trying to assist an optometrist or just want to be a technician for him - the technicians do pre-testing on patients and get them ready to be seen by the doctor. Experience is good but not a necessity for this kind of position. Call around to local optometrists' offices to see if anyone is hiring and check out ads for open positions.
