Can I put a good word in for Jacques Pepin? He cooked for three French Presidents and turned down a White House gig to work for Howard Johnson's for ten years in order to learn how to productionalize food. All the above mentioned are great chefs but this man has taught me the most and in the most unassuming manner. And talk about knife skills! Check him out on PBS

Bobby Flay. He gets really excited about helping people make good food, and he's not afraid to hang his butt out where it can get kicked. He goes up against chefs at the spur of the moment, and I like that. He loves to cook, and learn new things, and he shows them to the world, doesn't keep it secret. That's cool.

my favorite is Giada De Laurentis. I teach a cooking class of mostly woman and all season I would mention her, on the last day of classes they bought her latest book for me as a gift. I like her great big smile! Most of the show I watch I get ideas for my classes, but she's the best to look at.

I've got to go with Mario Batalli.

It's amazing to watch him on Iron Chef America. Without fail the tasters try his opponent's dishes and always say things like "that's wonderful" and "fantastic". Then they get around to Mario's stuff and the responses are almost always unanimously something like "Oh my god!!! I want to have your children!!!!". I even saw a judge once literally get out of his chair and give the man a hug!

Now that's cooking!!!!

Mario Battalli (sp?), without a doubt. Knows so much, cooks so clean, and extremely pleasant on screen personality.

But if we include off Food Network....I'm a big Gordon Ramsey fan as well....he knows what he wants, and he accepts nothing less than perfection.

Mario Batali because he probably has the most knowledge about the food he creates and why there are regional variations and substitutable ingredients there in. He explains it all IE: the region the dish comes from, what ingredients vary in the recipe and why in relation to seasonality, etc.
