If they are smaller, boil them whole. Add some crab oil and salt to the water.
Regardless of size, you could also skin them and slice them into quarter inch slices. Cover the bottom of a skillet with oil and fry them in it. You will need to keep the lid on the skillet and flip the potatoes after they brown on bottom.

Slice them thin and place them on a piece of aluminium foil. Season them with garlic or garlic powder, red onions, parsley, salt and butter. Close the foil around. Grill them on the BBQ on the upper grill for 30-45 minutes. Delicious!

Potato salad.
Boil 1 hour skins on. Let cool and dice. Chop several onions. Fry several strips of bacon crisp.
Put potatos, onions, bacon pieces in big bowl. Blend in
mayo, and sour cream, until quite wet. Sprinkle with garlic salt, oregano, and fresh parsley, and mix well.
Cover and put in refrig over night.
This is my recipe, and it is good. Add scallions chopped if you wish. It will soon disappear!!

A friend of mine came of with Joanie's Potatoes. You take new red potato's cut into "chunks", place in glass baking dish, cover with "dollops" of real butter, sprinkle Mrs. Dash with garlic and herbs, cover with aluminum foil, and bake at 400 degrees for 45 minutes. It sounds easy but they are delicious. Good luck.

Cut them into chunks and boil with the skins on then mash them - redskins are the most flavorful of the potatos and are awesome baked, fried or cooked like you would any potato.
