It kind of reminded me of yorkshire pudding. The bacon was on top but cooked into the pancake.

Speckkuchen
3/4 cup flour
1 cup milk
2 eggs
salt and pepper
1 and 1/2 tsp crumbled herbs or herb blends
1/2 pound lean bacon(Berlin Version is salted pork cut in small cubes and fried like the bacon)
Preheat oven to 350 F.

Cut bacon into small pieces and fry in frying pan till crispy, then drain off grease.

Sift flour into bowl and add half the milk. Stir till smooth. Add eggs and remaining milk and beat till batter is smooth and light. Add seasonings.

Spoon 2 teaspoons of the bacon grease into the bottom of the baking dish or pie plate. Put bacon into bottom of dish and carefully pour on the batter.

Bake for 30 minutes till pancake is set or till the top is golden brown.

this is not in the oven but good

1/3 c Yellow cornmeal
1 c All-purpose flour
1 ts Salt
2 ts Baking powder
1 Egg
1 1/4 c Milk
1 tb Bacon fat; melted
2 Strips bacon; cooked and
- crumbled

Mix cornmeal, flour, salt and baking powder. In a separate bowl, beat the
egg. Add milk and then bacon fat. Stir this mixture slowly into the dry
ingredients, mixing well. The batter should be fairly thin; add more milk
if necessary. Mix in crumbled bacon. Cook pancakes in a skillet or on a
griddle.
