Cube the chicken. Cook the rice for 8 to 10 minutes (not completely cooked). Butter or oil the inside of the casserole dish. Put Rice, Chicken, and Broccoli in the dish. Add 2/3 cup of water. Bake at 425 until the chicken is done. (It takes about 20 minutes)

Chicken & Rice

1T. vegetable oil
4 boneless, skinless chicken breasts halves
1 can (10 3/4 oz.) cream of chicken soup
1 1/2 c. water
1/4 tsp. each paprika and pepper
2 c. white rice, uncooked
2 c. fresh or frozen broccoli flowerets

1. Heat oil in skillet. Add chicken and cook until brown. Remove chicken.
2. Add soup, water, paprika and pepper; stir. Heat to a boil.
3. Stir in rice and broccoli. Top with chicken. Season chicken with additional paprika and pepper; cover. Cook on low heat 5 min. or until cooked through. Serves 4

For that combination, stir-fry or risotto sounds the best result. Or a Thai Green Curry, I usually use green beans but I'm sure brocolli would be a good substitute. As long as it is added pre steamed and cooled so it doesn't loose it's colour at the last minute just to warm through. Green curry won't be an option if this is for a diet. High calories in the coconut milk.

For 2 people

Add 2 pieces of raw chicken to a baking dish. Add uncooked brown rice and broccoli and mozz. cheese. Pour Crean of mushroom soup over it and add a can of water. Season with salt, pepper, and oregano. Bake about 45 minutes on 350.

BROCCOLI & CHEESE WITH RICE

1 large stalk broccoli
about 4-6 slices of Velveeta cheese (depending on how cheesy you like your meals)
1 medium - small sized bag of rice.
1 c. of milk

1. Cut the broccoli into bite size pieces.

2. Put stove on low and bring milk to a simmer.

3. Shred and melt the cheese in the milk. Stir.

4. Once the milk/chees mixture has thickened, your sauce is done. Place sauce aside.

5. In two pots, the first place about 5 cups of ater and bring water to a boil. In the second, place 6 cups of water into it and bring that to a boil.

6. In the pot with 5 cups of water, place your broccoli into it and let it boil to your liking of tenderness. (My family likes it very soft, and we boil it for about 15 minutes."

7. In the second pot, add the rice. When the rice is to your desired tenderness, drain. 8. When you are finished, mix cheese and broccoli. Place on rice.

Serves 3-5 people.

Chicken and Rice Casserole with Broccoli

2 cups uncooked instant rice
2 boneless skinless chicken breasts
1 cup milk
1 can condensed cream of chicken soup
1 can condensed cheddar cheese soup
1 cup mayonaise
1 cup mozzarella cheese
Broccoli florets (I use fresh, 1 bunch, but you can also use 1 package frozen)

1. Combine 2 cups of rice with 2 cups water in microwavable bowl, and microwave for 5 minutes. Let sit until ready to use.

2. While rice is cooking, cut chicken breasts into small pieces and cook in olive oil until the pink is gone. (chicken will not be done at this point)

3. In a large mixing bowl, combine both cans of soup and mayonaise with milk. Add half of the mozzarella cheese. When chicken is no longer pink stir into mixture. Add salt and pepper to taste (I use about a teaspoon of each)

4. Spray large baking dish with non-stick cooking spray, and layer botton with broccoli florets. On top of broccoli spread rice, and cover with soup mixture. Bake uncovered at 350 about 30 to 45 minutes until brown. Sprinkle remaining cheese on top and bake until it is melted.

Easy Rolls

1 cup self-rising flour
1/2 cup milk
2 tablespoons mayonaise
Margarine

Cut margarine into 1 pat for each section on your muffin pan. Put into muffin tin (1 pat in each little hole) let sit in oven until margarine is melted. While waiting for it to melt, combine ingredients together and stir gently. Take muffin pan out and pour mixture evenly into muffin tin. Bake at 350 for about 20 minutes or until golden brown.

Plop it all in a casserole and cover with acan of Cream of chicken soup, stir , add some cheese and bake it! it will be delicious!

uase all of those ingredients along with cream of chicken soup, cup of milk and small can of mushrooms...season to taste with salt and pepper...you can also do this with dry egg noodles instead of rice.....
