What are some good dessert ideas that are easy and made from scratch. I'm kind of working on some different meals for my family before I head to Florida.

Here's some of my favorite recipes:
Applesauce Brownie Cake
1/2 cup butter flavored shortening
1 1/2 c. sugar
1/2 tsp. cinnamon
2 cups flour
2 T. cocoa
1 1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 can applesauce (2 cups)

Combine all ingredients and beat 1 minute. Pour into a greased 11x13 inch pan (like those cookie sheets with the 1-inch edges works) or you can bake it in a 9x13 and increase baking time. In a small bowl mix 1/2 cup chopped nuts, 2 T. sugar, and 6 oz. chocolate chips. Sprinkle on top of cake and bake for 30 min. at 350. Makes a very moist and delicious cake!

Toll House Pie

1 unbaked pie shell
2 large eggs
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter, softened
1 cup chocolate chips
1 cup chopped nuts
vanilla ice cream

Beat eggs in a large bowl on high speed until foamy. Beat in flour and sugars. Beat in butter. Stir in nuts and chocolate chips. Spoon into pie shell. Bake 55-60 minutes or until knife inserted halfway between outside edge and center comes out clean. Cool and serve with vanilla ice cream. (sometimes I melt a few more chocolate chips in the microwave with a tablespoon or so of milk and drizzle it on top of pie so it looks prettier!)

Grandma's Cobbler

1 T. butter
1/3 cup sugar
1/2 cup milk
1 tsp. vanilla
2 tsp. baking powder
1 cup flour
Melt butter and add sugar, milk and vanilla. Stir in flour and baking powder. Mix well.
Mix together:
2 to 3 cups fresh fruit (I like blackberries or blueberries)
3/4 cup sugar
1 to 2 T. corn starch
Spread fruit in an 8x8 inch baking dish. Drop batter from spoon over fruit. Sprinkle more sugar over batter. Bake 30 minutes at 350. Serve slightly warm with ice cream.

Almond Mocha Pie

1 tsp. instant coffee
2 T. boiling water
3 Hershey Bars with Almonds
1 8 oz. cool whip
1 9-inch baked pie shell

In small bowl, dissolve coffee in boiling water; set aside. In saucepan, melt the candy bars over low heat; cool slightly. Fold in half of the cool whip. Fold in coffee and remaining cool whip. Pour into shell. Freeze. Also good in one of those pre-made oreo pie shells!

These pies are good to make. If you buy the storebought graham cracker crusts, they come with a plastic insert that flips over the filled pies; and then you can stack them in the refrigerator. You can make the day ahead too. You can also use pink lemonade or limeade to make a variety of flavors: LEMONADE PIE 1 9" graham cracker pie 1 large Cool Whip, thawed 1 6-oz can frozen lemonade concentrate, thawed 1 can Eagle Brand sweetened, condensed milk Mix last 3 ingredients together until well blended; put into crust. You can dollop more Cool Whip on top if you want. Chill at least 4 hours Platters of brownies, cookies, mini-cheesecakes (do in cupcake papers, using a vanilla wafer as the "crust"), cream puffs Perhaps have a fruit platter with a dip. You can melt a can of storebought chocolate frosting, or mix some orange juice into a container of blended orange yogurt, or just mix brown sugar into sour cream

I love to make homemade chocolate chip cookies and then make icecream sandwiches with them. The kids love them too. Some other ideas are
strawberry short cake
any kind of cobbler
coconut cake
german chocolate cake
pies
brownies
dump cake (you just dump the ingredients in and bake)

I suggest getting one of those dessert cookbooks that you find at the checkout aisle at the grocery store. Most of them are simple, easy and delicious.

No-Bake Chocolate Fudge Tart

YIELDS: 8 servings
PREP TIME:10 min.
COOK TIME: Microwave 1 1/2 min.

INGREDIENTS:

• 3/4 cup half-and-half or light cream
• 3 tablespoons sugar
• 6 ounces semisweet chocolate, chopped
• 2 ounces unsweetened chocolate, chopped
• 1 teaspoon vanilla extract
• 1 (6-ounce) ready-to-use chocolate cookie piecrust
• 1/2 cup heavy or whipping cream
• Chocolate shavings for garnish


DIRECTIONS:
In microwave-safe medium bowl, combine half-and-half and 2
tablespoons sugar. Heat mixture in microwave oven on High 1 1/2 minutes or until very hot. Add chocolates and vanilla and stir until chocolates melt. Pour mixture into piecrust. Cover and refrigerate at least 1 hour or up to 3 days. To serve, in small bowl, with mixer at medium speed, beat heavy cream until soft peaks form. Add remaining 1 tablespoon sugar; beat until stiff peaks form. With spatula, spread whipped cream over chocolate filling. Garnish with chocolate shavings.

Chocolate Crunch Squares

1 Tbsp. butter or margarine
3 cups (1/2 of 10-1/2-oz. pkg.) JET-PUFFED Miniature Marshmallows
1/2 cup peanut butter, divided
4 cups POST HONEY BUNCHES OF OATS Cereal
4 squares BAKER'S Semi-Sweet Baking Chocolate



LIGHTLY grease 8-inch square pan. Microwave butter and marshmallows in large microwaveable bowl on HIGH 30 sec.; stir. Microwave 30 sec. or until marshmallows are melted when stirred.
RESERVE 2 Tbsp. peanut butter for frosting; set aside. Stir remaining peanut butter into marshmallow mixture. Immediately add cereal; toss until well coated. Press mixture into prepared pan.
MICROWAVE chocolate and reserved 2 Tbsp. peanut butter in microwaveable bowl 1 to 1-1/2 min., stirring after 30 sec. Stir until chocolate is completely melted and mixture is smooth. Pour over cereal treats; spread to cover. Refrigerate 15 min. until frosting is set. Cut into 16 squares.

I like jello pudding or regular jello with whipped topping!

You can also make up cookiedough and put it in the freezer to use later.
