Control Engineering is the science by which engineers use instrumentation to control certain conditions. Such as flow control, temperature control, level control, etc.
There are many companies out there that design, build, and sell all these instruments. Ex: Fisher Instruments, Magnetrol, etc.
This is an excellent field to get into. Go for it.

Yup, go become an engineer who specializes in Dynamics and Controls...
But the thing is, most people have no idea what actually goes into controls until they take their first controls classes...
Beef up on your Laplace transforms, Fourier Series, Nyquist and Bode Diagrams and plots, imaginary roots... and always remember positive real roots always indicate an unstable system! Oh yeah, and there are some concepts in there to, but they just get lost in the mathematics. :)

Linear controls involve the use of one or more feedback loops to control a system or systems. The best example of a control system would be your body. When you get hot your body sweats to cool you off. When you are cool you stop sweating. Controls main goal it keep things stable and to reduce the amount of time something unwanted occurs.
I wouldn't worry about much more than that until you get into engineering classes because it gets confusing.
