This recipe will make a big cake,just halve the amount,or freeze half. Rub 9oz soft margarine into1lb 2oz self raising flour,add 9oz white sugar and stir.Chop 4 eating apples and put into mixture.In a bowl beat 3 eggs with 10 fl.oz milk,pour into apple mixture and mix well.Pour whole lot into 10" x 8" pyrex dish,or similar.Sprinkle lots of demerara sugar over and bake for 60-90 mins on gas 3-4.

here is the recipe

4 eggs
2 teaspoons vanilla extract
1 cup (2 sticks) butter, melted
1-1/2 cups white sugar
2 cups all-purpose white flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
4 teaspoons poppy seeds
6 to 8 apples, peeled, cored, and sliced (Golden Delicious, Rome, Northern Spy, etc.)
Preheat the oven to 350 degrees F. Grease a 9-inch by 13-inch baking pan.
Beat together the eggs, vanilla, butter, and sugar. Sift together the flour, baking powder, salt, and cinnamon. Add to the egg mixture along with the poppy seeds and blend well. Gently fold in the apples. Pour into the prepared pan.

Bake for 45 to 50 minutes or until a tester inserted near the center comes out clean. Let cool in the pan. Serve warm or completely cooled

8 cups apples, pared, cored and thinly sliced
1 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1 dash nutmeg
Preheat oven to 350ºF.
Cake:.
In a large bowl, cream together shortening and sugar. Add eggs and lemon extract; beat well.
In another bowl, sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, beating after each addition.
Pour mixture into a lightly greased and floured 10-1/2"x14-3/4" pan. Top with filling and bake for 1 hour or until cake tests done.
Filling:.
Combine all ingredients in a bowl; mix well. Spread over cake to cover.

You just grate the apples and add to a fairly plain mixture, don't make it too wet as the apples will add water. You can spice it up with cinnamon, if you like that. I prefer it not very sweet, but sprinkle some sugar on top and eat it still warm.
I don't really have a recipe. It's roughly this: put some SR flour in a bowl,say 8oz,add 3oz brown sugar, 1 lb apples peeled and grated, some oil(glug,glug), some eggs(2?)stir up and add water to make a thick batter.
If you don't have SR flour, use plain flour plus baking powder. You can use half flour/half rolled oats( must add baking powder). You can use white sugar, but demerara is best. Flavour with cinnamon or mixed spice, if liked. You can add dried fruit if you like that.
Put it in a greased baking pan, spreading it out level.
Bake it in a medium hot oven, (about 170?) until done and golden.

Apple Walnut Cake
INGREDIENTS:
1 1/3 cups light brown sugar, firmly packed
1/2 cup melted margarine
2 eggs, lightly beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 cup milk
2 cups finely chopped apple
1 cup chopped walnuts
1 cup raisins
PREPARATION:
Grease and flour a 13x9x2-inch baking pan.
In a large mixing bowl, combine sugar and melted margarine. Beat in eggs and vanilla with a wooden spoon.

Into another bowl sift flour, baking soda, baking powder, and cinnamon.

Stir into egg mixture alternating with milk. Stir in apples, chopped walnuts, and raisins.
Spoon batter into prepared pan. Bake at 350° for about 45 minutes, until cake springs back when gently pressed with finger.

Let cool in pan on rack. Frost with cream cheese frosting or a caramel frosting. Makes about 20 servings.

When I want to make apple cake or apple sauce cake, I use a carrot cake recipe and just substitute apple for carrots.

For all its worth....I like to get the apple-cinnamon quick bread mix by pillsbury. I then cut up two granny smith apples and cook them in a frying pan with butter, cinnamon,ginger and nutmeg. (one or two teaspoons of each)When they are softened,I pour them into the mix and then bake according to instructions.If you want it to be more like a cake, put it in a cake pan to bake. I like to put cream cheese icing on it.I get a lot of complements on it. Good luck on finding a recipe you like.
