How about something unique like going to a trophy shop and buying him a trophy or plaque stating the world's greatest dad? You could get one and they aren't real expensive as one may think. PS - They could have one ready for you pretty quickly like the next day.

Ask your mom for one of their old wedding pictures, and blow it up to a larger size, and put it in a nice beautiful frame. If you've got money to spend, you can ask a portrait artist to recreate that photo in a painting, and that's really special. Also, write a poem or a letter when you present your gift. Good luck!

I don't know if this is age specific, but I had a star named after my father through the Star Registry. He LOVED it and had the certificate framed.
Maybe something nostalgic if the star isn't right for him.
