Why don't you just go to the shop and buy some pumpkin?
It is really easy to cook, doesn't take long, and it keeps reasonably well.
What I do is peel it and chop it up. I bag what I don't want and put it in the freezer. Then I cook with the part I do want.
I don't know what you want to make, I like it curried with prawns, but I have made pumpkin pie too. Also made pumpkin soup and just used as a vegetable.
If you don't know where to get pumpkin, try an Asian or Chinese supermarket.
I don't know Libby's pumpkin, I like the flattish ones better than the round ones.
