can any one give me a good recipe as i have just brought a slow cooker and am in need of some good recipes

Chicken Enchilada Casserole for Slow Cookers

3 to 4 lbs chicken
1 medium onion, finely chopped
1 T. oil
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
10 oz. can green enchilada sauce
4 oz. can diced green chilies
20 corn tortillas
3 cups shredded cheddar cheese
Boil chicken (I just brown it in a skillet usually!) shred meat with a fork and discard bones and skin (and I just usually use a package of chicken breasts so I dont have to deal with bones and skin!)
Saute onion in oil until tender. Stir in soups, sour cream, green enchilada sauce, and chilies.
Tear tortillas into bite sized pieces. Layer half of the sauce, chicken, tortillas, and cheese in a slow cooker, alternating layers so you end with cheese and sauce.
Cover and cook on low 5-6 hours or high 2-3 hours.

Barbequed Chicken

2 lbs. chicken
1/4 cup flour
1 cup ketchup
2 cups water
1/3 cup worchestershire
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
2 drops Tabasco sauce
1/4 tsp. garlic salt
1/4 tsp. onion salt

Dust chicken with flour. Transfer to slow cooker. Combine remaining ingredients and pour over chicken. Cover and cook on low 5 hours.

Family Favorite Casserole

1 1/2 lbs. ground beef
1 onion, chopped
1 1/2 cup diced potatoes
1 1/2 cup diced carrots
1 1/2 cup peas
1 1/2 cup macaroni, cooked
1 can cream of celery soup
2 cups grated cheddar cheese
2 cups milk
1 1/2 tsp. salt

Fry beef and onion. Drain grease. Combine beef with veggies, soup, cheese, and salt. Add to slow cooker. Cover and cook on high for 4 hours or low for 8-10. Add cooked macaroni and milk during last 15 minutes on high or 30 minutes on low.

These are recipes from a cookbook I have called Fix it and Forget it! I've made all of these and they are really good! Hope this helps!

You need: chicken thighs (better flavour and more succulent) skin removed - two per person (or more as it's not worth making small quantities of casserole)
Shallots (for preference as they retain shape and texture - or substitute onion) - roughly 4 per serving
Button mushrooms - again roughly four per serving
Tomatoes skinned and seeded (or tin of peeled tomatoes)
Teaspoonful of sugar (always needed with tomatoes to take away acidity)
Herbs to taste - bay leaf, rosemary, thyme, sage, oregano (just pick the ones you like - this is a hearty dish and needs strong herbs.)
Garlic to taste - chop it and squash it into paste with flat side of blade of knife on tsp salt on a board
Red wine to cover - as much as you feel you can spare - make up with stock if you don't want alcohol. (And if it's not good enough to drink, it's not good enough to cook with)
Seasoning to taste

If you have the time, coat the chicken in flour and brown it in a frying pan with the shallots. Then put all ingredients into slow cooker, check instruction book and set off - I would suggest minimum 2 hours cooking time. This is a very forgiving recipe - you can just put everything in together and leave it if you don't have time for browning. Leave out the flour in this case and thicken just before serving.
Check and adjust seasoning before serving.

beef is great as the cheaper cuts also have the most flavour and stand long cooking well. Try brisket of beef in red wine for a first attempt
