Well, you certainly have an option if someone attempts to stop you, plus, you could get free room and board, and meet lots of interesting people if you choose this option.

An interesting question, and a very valid point!
This reveals the truth that there is no such thing as TRUE security on an aircraft. Give me 5 minutes on any flight and I can amass enough deadly weapons to probably effect a takeover.
Just a few obvious items:
Shoelaces. Make an excellent garotte. Think Luca Brazzi's end in The Godfather.
Broken glass: As asked by the poster of the question. Pretty obvious.
Laptop computer: Broken glass from the display. Short-circuit the battery to start a fire. Use the housing as a bludgeon. Many are made out of titanium, very tough stuff!
Matches: Start a fire.
Lighters: Sure they're banned, but MANY get past security with them. With a can of hairspray, it makes a terrifying blowtorch.
Keep in mind that anyone with nefarious intent already knows about these, and dozens of other common items that can effectively be used as weapons as well.

I am a Flight Attendant, and you are correct they do and they also have glass wine glasses in Business and first classes. I guess the biggest part to this is what is classed a weapon such as scissors and knifes etc. But I guess if something happens in a major way with someone using a bottle as a weapon than the system will change. I think the industry tries to maintain security and keep balance with the public. Believe me there is a lot of security that happens that is not made knowen to the public.

Yes, they allow glass bottles in flight. Otherwise why would they sell them at duty free stores? Think about it.
As far as security, at least in the US, security is just a smokescreen to make passengers feel better.

People have been beaten to death, literally, on aircraft in the past 5 years when they act out in a threatening manner. Just the fact that glass can be sharp shouldn't be the biggest worry.
