Before I had my children, I could eat whatever I wanted and not gain a lb, usually stayed around 100 lbs. Since my last child was born 3 years ago I have been having trouble watching my weight. I am the meat and potato type and really not of fan of the health food. Anyone out there have any suggestions? Any good cook books or recipes? I don't really like the funky flavors.

POTATO SUPREMES

4 COLORADO russet variety potatoes

Salt and pepper

8 teaspoons whole seed or grainy mustard

6 ounces Brie cheese

2 tablespoons finely chopped chives or

green onion tops

Heat oven to 4000. Prick potatoes in 5-6 places with the tines of a fork. Bake potatoes 50-60 minutes, until tender and skins are crisp. Cut potatoes cross- wise into 4 thick slices. With a melon baller or small spoon, scoop out a little potato from the center. Season with salt and pepper; spread each hollowed-out center with 1/2 teaspoon mustard. Cut up Brie into 16 chunks; place one piece in each center. Sprinkle with chives. Place on baking sheet. Bake 15-20 minutes until cheese has melted and browned in spots. Serve warm. Makes 16 appetizers.

1/4 cup olive oil
1 1/4 pounds stew beef, cut into 1-inch pieces
6 large garlic cloves, minced
6 cups beef stock or canned beef broth
I cup of Guinness beer
1 cup of fine red wine
2 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon dried thyme
1 tablespoon Worcestershire sauce
2 bay leaves
2 tablespoons (1/4 stick) butter
3 pounds russet potatoes, peeled, cut into 1/2-inch pieces (about 7 cups)
1 large onion, chopped
2 cups 1/2-inch pieces peeled carrots
Salt and Pepper
2 tablespoons chopped fresh parsley

1 Heat olive oil in heavy large pot over medium-high heat. Add beef and sauté until brown on all sides, about 5 minutes. Add garlic and sauté 1 minute. Add beef stock, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir to combine. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.

2 While the meet and stock is simmering, melt butter in another large pot over medium heat. Add potatoes, onion and carrots. Sauté vegetables until golden, about 20 minutes.

3 Add vegetables to beef stew. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard bay leaves. Tilt pan and spoon off fat. Transfer stew to serving bowl. Sprinkle with parsley and serve. (Can be prepared up to 2 days ahead. Salt and pepper to taste. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before serving.)

Serves 4 to 6.

You sound like me when it comes to food. I've learned that I can eat whatever I want in moderation. Choose lean cuts of meat and watch your portions, the proper amount is 4 ounces for a serving. And eat that potato, just buy light butter and go easy on it. Or try cooking veggies with your meat. Just don't cook your stuff in butter or creamy sauces. I still have a steak and baked potato once a week and I've lost 30 pounds.

try some websites i will list below ad dont be afraid of the vegetarian site it just offers some great lowfat foods and you can add meat to any dish..i do it
have a lighter breakfast, i eat yogurt with granola and some blueberries
avoid the eggs and bacon for bfast
and then grazre thruought the day it is the large meals of meat and potatoes that really kill a diet!!!!
smaller portions but just thinking of meat and potatoes right now makes me want a steak with bluecheese!!!!

the kids can jion you on the walks like walk to a neighborhood park

Barry Sears the author of Eating in the Zone explains what are grandparents told us eat a balanced meal. My using his method you get a well balanced meal, it regulates your insulin production and you have more energy. More energy will enable you to do exercises even ifs its walking with your children. The balanced meal keeps you from feeling hungry and craving sweets and starchy carbs. The premise of the book is to eat 1/3 protein and 2/3 carbs. The potatoes you enjoy ar switched to sweet potatoes, you will east greens and use good fats like olive oil.

Concentrate more on what you eat, with what and not so much calorie and fat counting. Everything in moderation!

Try never to eat carbs and protein together or at least balance it out with more of one and less of the other.

Always eat some kind of fiber with either your protein or your carb. and fiber ( as in bread) needs some kind of fat as a catalyst for it to be able to properly process in your intestine.

Never eat fruit with anything else and don't eat it at night.
certain fruits should not be eaten together at all.

Your body has a harder time with digestion especially after your hormones change with childbirth. Learn the tricks to optimal digestion and your body will do the rest all on its own.

on foodnetwork.com check out the "Healthy Appetite with Ellie Krieger" show database for her recipes. Also, I love Giada De Laurentiis "Everday Italian" cookbook. Italian can be very heavy but she lightens it up nicely. There are a ton of easy yummy recipes.

just stick w/ grilled chicken or fish and sauteed veggies. eat fruit, stay away from potatoes, pasta, white bread, sugar. exercise. drink plenty of water. dont ever drink calories- always water or diet anything. good luck!
