Try this one for breakfast as it makes a lot and is delicious.
Ham and Cheese Strata
12 slices white bread
12 ounces sharp process cheese
2 cups diced ham
3 Tbs. instant minced onion
6 eggs lightly beaten
3 1/2 cups milk
1/2 tsp. salt
1 t. Dijon style mustard
1/4 tsp. nutmeg
Trim crusts from bread if desired. Cut bread into cubes. Place the bread cubes in the bottom of a lightly buttered 13x9x2-inch casserole dish.
Layer cheese slices and ham cubes over top of bread; sprinkle with minced onion. Lightly beat eggs. Add milk, salt, mustard and nutmeg. Pour over contents of baking dish. Cover with plastic wrap or aluminum foil and refrigerate 24 hours or overnight. Uncover and bake at 325* for 55 minutes. Let stand 10 minutes before serving.
Makes 8 realistic servings. Sparkling Cranberry juice or champagne are great accompaniments.

EASY TURNOVERS
1/4 lb. cream cheese
1/4 lb. butter
1 cup flour
filling of your choice
Filling suggestions: Apple Pie Filling, Lemon Curd or Lemon Pie Filling, Rasberry Jam, Strawberry Jam, Blueberry Pie Filling, Cream Cheese/Farmer's Cheese and Pineapple, etc.
Cream the cheese and butter together well. Stir in flour until mixed to a smooth dough. Chill dough for at least 45 minutes.
Thinly roll out on a surface which has been lightly dusted with flour and cut into rounds using a biscuit cutter.
Place small portions of filling in the center of each circle. Turn over and crimp together the edges with a fork, sealing well. Make several slits in the top of the dough to allow steam to escape.
If desired, brush with cream or a glaze made from 1 egg yolk mixed with 2 tablespoons water to add shine.
Bake at 375°F until light brown.

Here's something simple for your 'Sweet Tooth'
2 cups S.R. Flour
1 cup dessicated coconut
1 cup raw sugar
enough milk to mix to a thick porridge and bake at 350 deg[180 c] until a skewer comes out clean.
For variety I add 1 teaspoon vanilla essence and/or a handful of sultanas or nuts. Use your imagination! This is a great basic cake that stays moist for days.

Pork Stew
Ingredients:
1 Tbs oil
1 1/2 lbs boneless pork loin, cut into 1-inch cubes
1/2 lb baby carrots
1/2 lb new potatoes, quartered
1 red pepper, seeded and coarsely chopped
1 16-oz. package frozen mixed vegetables
1 8-oz. can whole baby corn, drained
1/2 tsp salt
1 tsp black pepper
1/2 tsp dried marjoram leaves
1 can reduced sodium chicken broth
2 packets brown gravy mix
Directions:
Heat oil in a skillet over medium-high heat. Add pork cubes and brown. In the stoneware, combine pork and remaining ingredients, except broth and gravy mix. Combine broth and gravy mix and pour over ingredients in the stoneware. Cover cook on Low 8 to 10 hours or on High 4 to 5 hours.

I think chicken wings are very easy to cook. Buy Chicken Wingettes, by Perdue so they are already cut for you. Then, put them in a shallow baking pan like 13x9. Cover with brown sugar and soy sauce. Bake at 400 for about one hour. They will come out delicious sticky teryiaki wings!
Another easy dessert is to use a pre-made pound cake, make small cubes, and cover with fresh berries and whipped cream.
Start with these, and work up to harder recipes! Good luck!

Easy Crockpot Beef Roast
1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix
Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).
It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove. Doesn't taste AT ALL like salad dressing!!!

BBQ CHICKEN (quick & easy)
2 chickens, cut up
1/4 cup butter
3 cloves of garlic, minced fine
1 large onion, chopped
1 cup ketchup
2 T. Worcestershire sauce
1/4 cup cider vinegar
1/4 cup sugar
1 tsp Creole seasoning, or salt
1/2 cup water
1/2 t. savory
Brown the chicken in your cast iron skillet in the butter.
Remove chicken and place in a baking pan/dish.
Add the garlic, onion, ketchup, worcestershire sauce, vinegar, sugar, seasoning, water and savory to the butter in the frying pan.
Mix well, then pour over the chicken.
Cover with foil and bake in 350ºF oven for about 1½ hours until done. Baste and turn several times during baking.

Heat in a pot, over the stove, a cup of butter and a cup of sugar. Fill another bowl (or plastic bag) with Cinnamon and sugar. Roll refrigerated biscuits in the Cinnamon and sugar mixture until they are covered with Cinnamon and sugar. Then press the Cinnamon and sugar covered biscuits into a 13x9 pan. Pour the heated butter and sugar mixture over the biscuits in the pan and bake for about 8 mins in 350 degrees. When done viola, Monkey Bread.

My easiest main course:
Pasta with spinach/boursin sauce
serves 2
150 grams of spaghetti
100 grams of smoked bacon bits
200 grams of frozen spinach
75 grams of Boursin soft cheese (or any kind of soft cheese with garlic&chives)
Bake the bacon bits until brown. Add the spinach and let it defrost in the pan. When the bacon/spinach mix is hot, add the Boursin cheese and mix until creamy.
Cook the spagetti following the instructions on the pack. Mix with the sauce and serve.
For dessert: Ice cream with mango sauce - looks chique, but is very easy
Serves 4
- 1 mango
- 2 tea spoons of cardamom powder
- vanilla ice cream
Peel a mango and cut the fruit from the seed. Put the fruit in the blender, add a teaspoon of cardamom powder and process until smooth. Pour the mango sauce in four plates, add a scoop of vanilla ice cream and top off with a hint of cardamom powder.

Brown 1pound hamburger and drain.
Cook noodles of your choice, drain.
Mix the 2 together with a jar of spaghetti sauce and 1/4 c. parmesan cheese. Pour in a 9x13 dish. Cover with mozzarella cheese.
Bake at 350 til cheese melts.
