Actually the taco is an American food not Mexican originally. Just like pizza, is not Italian, and apple pie is not American it's british. Just a few of the many myths around today.

They can grow corn in Mexico but it's to hot for any substantial wheat production. Taco shells are made from ground corn, sandwich bread is made from powdered wheat.

Probably since it's easier south to have great corn meal and americans are used to white bread.
