A simple question you would think, but where do you find the answer?

bake one and find out.

well youre best baking quite a few to get the results over a wide range and average it. just remember to log each batches results.

i would guess burnt ones are more dense.

to see if a sponge is done just stick a skewer in the middle and if it comes out clean its ready.

but leave in the tin until cooled tho.

Well it's kinda spongy, isn't it.

Seriously though. That is a can of worms. There are various types of sponge cakes. All of different density.

It is a simple question, but one which the scientific community do not find much use for. Except at tea break :)

To make the perfect sponge cake you must get the weight accurate by first weighing the eggs and then making sure that the sugar and butter each weigh the same as the total weight of the eggs. Then incorporate lots of air by beating the eggs well and by sifting the flour

There's a function generally referred to as SDF (spongecake density factor) and is represented by a percentage from 1 to 100. 100 means that it has a bricklike density and 1 means you can't even see it because it disappeared during the cooking period.

The equation for the SDF is represented as:

SDF=(Weight * Pan Size * size or a small sampling of air holes) / how good it tastes * the smell factor.

A sponge cake should be "springy" to the touch and have air holes in it like a sponge; hence, the name. My mother used to make them from scratch with a lot of egg yolks and they were wonderful! So moist you didn't need to put anything on them.

density of cake means how heavy it is - if you buy a victoria sponge from the shop (a nice one) it will be light but if you make a bad one or buy a cheap one it will be heavier (denser) andd make you feel bloated. it isnt as nice.

0.045 pukka's. that is 0.045 the density of a pukka pie, which being a 'super-dense material' is the recognised benchmark.
