It's pretty brown on the outside....

What sort of odor would I look for? It has a strong odor, but not foul or anything.

It was in it's original airtight packaging the whole time. In the freezer for about a month.

I would say that if it looked and smelled OK, it would probably be OK. First of all, it takes a day or so to thaw if you've had it in the fridge all that time. And a chunk of meat will be fine for 4-5 days. Second, it's not GROUND meat which spoils faster than a nice chunk of roast.

I once had a butcher tell me that large chunks of beef could stay even unrefrigerated for several days. Don't know how true that is.

Unless it has a greasy appearance it should be fine. The brown is a discoloring from sitting in the blood and oxidation. It is referred to as "age" in the food service realm. As chefs we use brown or "green" meat all the time and it is actually advantageous in that the muscle fibers will have started to break down and the cut of meat will be more tender. I do this to most of my meats on purpose for that very reason.


Does it aggravate anyone else that people who have no real knowledge about these subjects answer them anyway...and usually in such a matter-of-fact way that they sound really convincing...? Sorry...but most of the answers on this page so far fit that catagory. After 25 years in food service, priamrily upscale steakhouses I feel somewhat qualified to answer this question....

I think it should be fine. If you put it directly in the fridge from the freezer, that would delay the thawing time by a day or so as opposed to letting it sit out for half the day.

If it has slimy feel to the outside and smells funny no! If it is pork definitely throw it out! If it is beef-slice one end off and see how deep the browning goes. If more than 1/8 inch throw away. But, as my mom always said, "If in doubt, throw it out!"

how long had it been in the freezer? does it smell? I am not sure I would keep it. the brown could be freezer burn....cut it open and smell it, does it smell good?
I would probably throw it out just to be on the safe side....but that's just me.

Bruce, it should be fine but you need to cook it within the next day, or 2 at THE MOST. If you go longer than 2 more days I would throw it out.

I would not use the roast. Meat should not be kept at refrigerator temperature more than 3 days. Odor would also let you know if spoilage had begun.

I'd say its fine since it probably took the first 2 days in the fridge to thoroughly defrost. Smell it, you'll know if its bad right away, but I doubt it.

When it starts running when you open the fridge.....I wouldn't try to eat it anymore if I were you. And the brown color on the outside is also no good sign. I would throw it away I guess....

Sorry I would definately put it in the bin .Five to six days far too long I would say to leave in fridege without cooking.

You have to be very careful.

Safer chance to chuck it in the bin and buy fresh meat and enjoy.rather than take a chance and have tummy problems.
