I'm trying to think of something new and interesting to do with the eggs in my fridge.

EGG, SAUSAGE, AND MUSHROOM BREAKFAST

2/14 cups seasoned croutons
1 & 1/2 lbs. bulk pork sausage
4 beaten eggs
2 & 1/4 cups milk
1 (10 & 3/4 oz.) can cream of mushroom soup
1 (4oz.) can unsliced mushrooms, drained
3/4 tsp.dry mustard
2 cups shredded cheddar cheese
cherry tomatoes and parsley to garnish

Spread croutons in a lightly greased 13x9x2" pan; set aside. Cook sausage until browned, stirring to crumble. Drain well; sprinkle sausage over croutons. Combine eggs, milk, soup, mushrooms, and mustard; pour over sausage. Cover and refrigerate at least 8 hours or over night. Remove from fridge, let stand 30 minutes. Bake uncovered at 325 degrees for 50 to 55 minutes. Sprinkle cheese over top, bake additional 5 minutes until cheese melts and garnish with halved cherry tomatoes and parsley. Serves approx. 8-10

Quiche Recipe


One premade deep dish pie crust
2 TSP olive oil
1 small onion, chopped
3 eggs
1 cup Whipping Cream
1/2 tsp basil
1/2 tsp oregano
1/2 tsp black pepper
garlic salt, to taste
3/4 Cup Mozzarella, shredded
3/4 Cup Cheddar, shredded1/2 lb mushrooms, cleaned and sliced

Optional additions:
Bacon Bits and chunks of ham (I brown them first)
White wine
Lawry's season salt

Saute onions and mushrooms in olive oil, adding garlic salt as desired, for about 20 minutes.

Beat together, eggs, cream and spices. Spoon mushrooms and onions mix into the bottom of the pie shell; add half of both of the cheeses, then pour the egg mixture over it, topping with the remaining cheese. Bake at 375 for 30-40 minutes.



Notes:

When doing the sauté I also add some white wine.
I sometimes add Lawry’s season salt (instead of, or) with the garlic salt. I’ve found that caramelizing the filling mix adds a deeper, richer flavor, as well: try cooking it on a slightly higher setting, but stirring frequently and keeping an eye on it.

I hand grind the basil and oregano in a mortar and pestle for a richer flavor, before adding them to the eggs and cream mix.

My personal favorite would be a very simple but amazingly tasty dish we call "french potatoes".
You cook some potatoes with skin and also some eggs (for my taste, the more the better ;-))
Peel both potatoes and eggs and cut them into thin slices.
Put all into a baking pan (or lasagna-dish....). Add a bit of oil, salt and a vegetable-based mixture (I use Croatian "vegeta", bur "knorr" also does the trick). Mix well so the spices are distributed evenly. Than take a cup of cream (200 ml) and spread it on top of it. Put in the stove on about 180°C and "bake" till the cream gets crispy.
Et voila!

I like egg sanwiches. scrambled Eggs on bread with mayo and mustrard. Sometimes with bacon with a slice of pepper jack cheese and hotsause.

I also like spinach quiche which requires eggs.

You may also want to make french toast.

Maybe a breakfast burrito with scrambled eggs and sausage or bacon

But my favorite is the chicken fajita omlette. first you brown chopped chicken when it's almost done you add chopped onions and bell peppers. set them aside, and then make the eggs. Get them as flat and large as possible because you will have to wrap the eggs around the meat. When the eggs are done put the chicken filling in the middle add cheese, then wrap the eggs around the meat and cheese. Serve with hotsauce, sour cream and salsa

I make my own tomato sauce, so I am always looking for ways to use it up. My friends little Italian mother told me to heat the sauce (about an inch or an inch and a half deep) in a frying pan. Heat it till its hot. With a spoon make an indentation in the sauce for each egg, crack up to four eggs, depending on the size of your frying pan. Once they start to set, with a spoon cover with sauce, continue to cook about 3-4 minutes. If eggs aren't cooking to your liking, cover frying pan with a lid or a plate. Spoon out eggs and sauce and serve with crusty loaf. It may sound strange, but it is actually pretty yummy.

Hard cooked eggs, egg salad, omelet w/ vegetable in season, quiche, use in meatballs or meatloaf, homemade pasta noodles, french toast, Bread pudding makes a great dessert, Deviled eggs, cream puffs, vanilla pudding, chocolate pudding, sponge cake, egg drop soup, Hope this helps gives you some ideas!

Omelets-hundreds of varieties, try oninos, peppers or just plain omelets, omelets iwht salt andpepper, omelets with sunny side up

Scrambled eggs-great for monring, easy to amake

Boil your eggs wth shell, remove shell, put salt adn pepper mixed in a small saucer, put hard boiled eggin salt and pepper and eat--good taste!

Try this: throw the eggs at someon's house on Halloween-i've never done before.

You MUST TRY THIS ONE: try and break an egg with this method--it'sunbreakable: interlock the fingeres of both your nads together with your palms facing yourself. Put the ends of hte oval of hte egg in the cent ero f your palms. and with you interlocked fingers and hands: exert pressure from both handso onto the egg, adn try and break--its not possible. I couldn't get anywhere, but its mad fun to do.

I like egg salad...Just boil a couple of eggs, add mayo, salt and if you like pickle relish. I like it on toasted bread.
