Au Gratin means with cheese. Any left over potatoes can be put into a cheese sauce, au gratin. Scalloped means that they are cooked in a milk base,usually they are sliced thin to aid in cooking. Sometimes a meat such as ham or pork is added. Sometimes onions are added.I have heard of tuna scalloped potatoes.

Scalloped potato's are made with milk, butter and flour and Au Gratin is made with cheese.
