It's not a meal, but my fiance's favorite thing I make for him is my peanut butter cake. It makes me laugh, because I do almost all of my baking from basic ingredients, as opposed to boxed mixes. I made this cake once, sort of to use up some cake mix that had been in the pantry for a while, and this is what he always wants for birthdays or special desserts!
I use a box of butter cake mix and make it according to the directions on the back- except I omit the oil and use 2/3 a cup of peanut butter and a teaspoon of vanilla in its place. I bake it in two round pans (to make a layer cake). After it has baked and cooled, I assemble it with a filling mixture I make by creaming together 1/2cup of vanilla frosting (from the tub) and 1/2cup peanut butter, and then frost the outside of the layer cake with the remaining vanilla frosting. I decorate it with Reese's Pieces.
Honestly, tasting it, you'd never know it wasn't made from scratch. It's a great way to end a special meal!

My husband loves my baked ziti...
Simply make your own pasta sauce I use "sweet" Italian sausage in mine or doctor up a store bought jar, then cook your ziti noodles until done or aldenti. Mix the 2 toghetherput a small amount of extra sauce on top followed by thinly sliced mozzarella cheese (not grated). Bake in the oven at 350 for 20 minutes covered then uncover & bake for about 15 minutes or until cheese is completly melted. Serve with garlic bread and a salad. Quick & easy.
Bounos- I make a huge pot of sauce & noodles and freeze in a casarole dish. It takes about 1 hour to cook if you unthaw firrst & it will last in frezer for about a month & half.

Her fave meal is actually quite simple to prepare: seared sea scallops and asparagus with melted butter accompanied with a greek salad.
Seared Sea Scallops:
1. Buy sea scallops: those are the big scallops, not those sad, tiny bay scallops. Two or three sea scallops is plenty per person, particularly since they aren't cheap.
2. Lightly brush the scallops with a bit of olive oil and then dust them lightly with garlic powder, herbes de provence, and kosher salt.
3. Place your pan on medium-high to high heat. Once the pan is hot, place the scallop in the pan. Stay with them and watch them as they will cook quickly. Turn them after one to two minutes. After second side has cooked for one to two minutes, remove from heat, and plate.
4. Meanwhile, get a coffee cup or a small bowl and place 1/4 to 1/3 cup of butter or margarine. Place in microwave and melt said butter. Prepare one cup/bowl of butter per person.
5. Serve the scallops with the melted butter.
6. Since you already have melted butter with this meal, why not steam some asparagus and serve that with the scallops as well. They too will taste great with the butter. Steaming asparagus is fairly simple, so I assume you already know how to do it. If not, make a comment and I will post those instructions.
Greek salad:
1. Buy the fresh spinach that comes in a bag and is already washed and ready-to-eat.
2. Mix spinach in a bowl with freshly diced roma tomatoes, sliced English cucumber, and chopped sweet onion.
3. Add as much crumbled feta cheese as you wish. It is delicious.
4. Add a balsalmic vinegrette or if you have to do it yourself, you can simply add some olive oil and some balsalmic vinegar. Judge how much to add based upon your tastes.
5. Toss. Then serve with the rest of your meal.
6. For this meal, a nice light wine would be excellent, but even a blush or a red table wine will do nicely.

My husband is easy -- his favorite is tacos. I use a Taco Bell seasoning packet, Large Mission Soft Tortillas, and just chop up lettuce & tomato, and set out the shredded cheese.
He also really likes spaghetti and meatballs. I make home made meat balls (I don't have my recipe with me, contact me if you'd like it and I'll get it for you -- it has italian sausage, ground beef, bread crumbs, and italian seasoning in it). Cook the spaghetti, add Prego Traditional Sauce, and pop some Coles Zesty Garlic Bread in the oven.

Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream
1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!
