Everyone loves ALMOND. And this Chinese Almond Cookies I got from the internet disappear as soon as you serve them! They're really great....thanks to Ashley who contributed this.
2 1/4 cups flour
1/2 teaspoon salt
3/4 teaspoon baking powder
1 cup shortening
almonds, cut in half
1/2 cup coconut
1 1/2 cups sugar
1 large egg
1 tablespoon water
1 teaspoon almond extract
Cream together; shortening, sugar, egg, water and extract.
Add sifted dry ingredients. Add coconut.
Knead dough for a few moments. Shape into small balls.
Placed on greased cookie sheets. Flatten with bottom of glass dipped in flour.
Put 1/2 almond on top of each cookie. Bake at 350° for 12-15 minutes

Potato Chip Cookies.
2 sticks real butter
1/2 cup sugar
1 1/2 cups flour
2 tsp. vanilla
1 cup crushed potato chips
1 cup broken pecans
Mix all together, spoon balls on pan. Bake at 350 until light brown.
cool about 10 min. & dust with powdered sugar.
These are some of the best cookies I've ever tasted. Enjoy!

Mexican Wedding Cookies are really good and really easy.
Ingredients:
/2 C. powdered sugar
1 C. butter, softened
2 tsp. almond extract
1 tsp. vanilla extract
2 C. flour
1/4 tsp. salt
optional:
1 C. finely chopped or ground almonds or pecans
Prep:
Preheat oven to 325
In large bowl, beat 1/2 cup powdered sugar, butter, and extracts until light and fluffy. Stir in flour, salt, and almonds or pecans (if desired). Mix until dough forms. Shape into 1 inch balls, or crescents. Place on ungreased cookie sheet.
Bake at 325 for 15-20 minutes. Watch closely until set but not brown. Remove from cookie sheet, cool slightly and roll in powdered sugar. Let cool completely and roll again.

Peanut Butter Cookies
Ingredients
1 cup butter, softened
2 eggs
1 ½ cups chunky peanut butter
1 cup flour
1 cup granulated sugar
1 tsp. baking soda
1 cup light-brown sugar, packed
Instructions
In bowl, cream butter with peanut butter. Add granulated
and brown sugars and beat until fluffy. Add eggs and beat.
Mix flour and baking soda.
Drop by rounded Tbls. onto greased baking sheet.
Flatten slightly with palm of hand. Bake at 350 degrees F.
until light-golden brown, about 15 minutes. Makes about
30 (3 inch) cookies.
NOTE: I added peanuts to this one.
I used the unsalted Spanish peanuts, sold in the baking dept.
Remember to remove the red skin part off of them first.
Snickerdoodles
Ingredients:
1 Cup Soft shortening or butter
1 ½ Cups sugar
2 eggs
2 ¾ Cups sifted flour
2 tsp. cream of tartar
1 tsp baking soda
½ tsp salt
2 Tbls. each cinnamon and sugar, mixed
Instructions
Mix together thoroughly the shortening or butter, sugar, and eggs
Sift together the sifted flour, cream of tartar, baking soda, and salt
Mix the sifted dry ingredients slowly into the mix of the wet ingredients and chill (I chill overnight)
Roll the dough into balls the aprox. size of a walnut and roll the balls into the cinnamon sugar mix.
Place the balls about 2 inches apart on an ungreased baking sheet. Bake until lightly brown, but still soft
at 375 degrees for aprox 13 minutes Makes 5 doz. 2” cookies
NOTES:
I tend to use more cinnamon and sugar, and I use more cinnamon than sugar within the ratio
The original instructions say to make a ball the size of a “small” walnut, but those come out too crisp for my tastes,
so I make mine a little larger, and changed the temp. and time of baking accordingly
The original recipe says to bake at 400 degrees for 8 to 10 minutes, I’ve noticed this varies
depending upon the oven being used.

1/2 cup butter, softened
1/2 cup peanut butter
1 cup packed brown sugar
1/2 cup white sugar

2 tablespoons light corn syrup
2 tablespoons water
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped semisweet chocolate

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.

Mint chocolate ravioli-EASIEST COOKIES EVER:
You need a large package of refrigerated sugar cookie dough and a package of any kind of mint chocolate cookies (like those girl scout ones or "grasshoppers")
Slice the dough thin
On a cookie sheet, place the sliced dough, then a mint cookie, then another slice of dough.
Bake at 350 for about 10-12 minutes.
The cookie dough will spread over the mint cookies, making "ravioli"!

Go to betty crocker.com and find the recipe for peanut butter cookies. Before you form the cookies add peanut butter chips and chocolate chips the the batter. Yummy!
