I need to purchase a canner, and was wondering whether or not I can use a pressure canner as a hot water bath as well. I understand that they now have pressure canners that do not have rubber gaskets anymore. Anyone know about them? Also anyone have a favorite dill pickle or hot pepper recipe? Thanks

Pressure cooker can be used for hot water bath if following the instructions in the accompaning booklet. A good pressure canner will have the rubber gasket, it is what keeps the pressure inside the pot. The recipes you are asking for come in the booklet with the canner.

You can use a pressure canner as a water bath canner,Pressure canners should have rubber gaskets.Follow your directions for pressure or hot water bath depending on whether it is acid food.Good luck.

dill pickles, freash cucumbers between 3 and4 inches long, wash well in a little bit of salt water then cut just the ends off about a 1/4 in.place some fresh dill in bottom of 1/2 gallon jar and a clove or 2 of garlic cut up. mean while in large pot bring to a boil 2 qts. of water, 1/2 cup of vinigar, a 1/3 cup of kosher salt and 2 tablespoons of sugar,stir until ingrediants dissolve, let cool for a bit ,you want it hot but not boiling hot,place all your pickles in jar standing up and add another clove of garlic or 2 then pour hot brine/water mix over them , make sure it covers all pickles then cover lightly with lid and let sit on counter out of the sun for 24 to 48 hours.your done. the salt,vinegar, and dill can be ajusted to your taste .once in a while i add a cut up jalapeno pepper to mine to spice them up
