The longest glass you own......telephotos. A light weight tripod and mono pod. Bug Spray (unscented with 60+ DEET). If you are into the small animals and bugs...a small bean bag (4x6 inches and filled 3/4 full) to rest the camera on various surfaces that are too uneven for a tripod. If you are shooting late in the day or very early in the morning you might benefit from having a cable release for the camera...depends on if you need an electronic one for some cameras....too expensive if you're not really into slow shutter speed stuff. A camelback water backpack is nice if you're covering a lot of ground. Granola Bars.....and a sack to carry your trash out.
Depending on the size of your telephoto you need a UV filter to cut haze...a polarizer is nice for water shots but it does eat up a lot of light...2 stops...and can be pretty expensive in the larger sizes. I shoot pretty big RAW files so I'd go with at least 4 gigs of cards. Some type of rain gear for you and the camera...large trash bags work well and are easy to use for trash if it doesn't rain. Sunscreen. AND probably the most important items...patience and a willingness to learn about the behaviors of the animals or birds you are looking to photograph.....you can save yourself a lot of effort if you learn where and what type of food the animals enjoy.

Telephoto lenses, a really good camera (digital), memory cards, batteries, chargers, tripods, case (for the camera), filters are fun if you have time. You should take an extra camera if you will be out of contact / in the field for several days. Be a shame to be there, and not be able to take pictures because you dropped one and it broke. So, take a backup. Yes, tripods for those slow, lazy shots, waiting for the sky color to change, etc.
