Quick and Easy 20-Minute Chicken Posole

INGREDIENTS:
1 tablespoon olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
2 teaspoons dried oregano
1/2 teaspoon ground cumin
2 (14.5 ounce) cans chicken broth
1 (15 ounce) can white hominy
1 (7 ounce) can chopped green chile peppers, drained
1 (2 ounce) can sliced black olives, drained
3/4 pound skinless, boneless chicken breast meat - cut into cubes

DIRECTIONS:
In a large pot over medium heat, combine oil, onion, garlic, oregano and cumin. Cook, covered, 5 minutes, until onions are tender.
Stir in broth, hominy, chile peppers and olives. Bring to a boil, then reduce heat to medium. Stir chicken into pot. Cover and cook until chicken is no longer pink, 5 to 10 minutes.

Not really a "recipe" per se, but I love chicken sweet n sour stir fry, and it's speedy quick. Saute some thawed cubed boneless skinless chicken breast in a little olive oil, while it is cooking slightly defrost a bag of any type of stir fry veggies in the microwave. While waiting for the chicken and veggies to get ready cook some minute rice. Add the veggies to the cooked chicken and add sauce ( I like sweet and sour ) and let the chicken and veggies get cooked through. Serve over the rice. Yummy!!

Spaghetti Pesto with salad, crusty bread and fresh butter.

The easiest way to do this is to buy a jar of good pesto sauce, stir it into hot, cooked spaghetti with some extra parmesan cheese.
Make a simple salad of lettuce or spinach leaves, tomatoes and cucumber and pour on a little vinagrette. (You can be more fancy when you have time.)
Cut the bread at the table, if you're eating with friends. Enjoy

CHOPPED SALAD WITH TUNA AND GARLIC

6 tbsps. extra virgin olive oil
1 clove minced garlic
1/4 cup red wine vinegar
1/2 head escarole, thinly sliced
1/2 head romain lettuce, thinly sliced
2 (6 oz.) cans tuna packed in water, drained well
salt and pepper to taste
In a large meduim bowl, whisk together oil, vinegar, and garlic.
Add escarole, romaine, tuna, salt and pepper; toss well & serve immediately. Great with a French crusty bread & butter.

Nutty Broccoli Salad

Main Ingredients
---------------------
1 Red Onion -finely chopped
1Head of Broccoli
handful of sultanas
cashew nuts

Dressing Ingredients
---------------------------
1 cup of mayonnaise
1 cup of castor sugar
3/4 cup of vinegar of your choice
Make earlier an dleave aside.
Mix together vineager slowly adding sultanas.

Wash and chop broccoli .add red onions, and cashew nuts.
Pour mayonnaise dressing over broccoli just before serving.
