If you use canned tuna fish, I think it will taste a bit gross. I'm pretty sure the restaurant was serving grilled tuna in that taco, eh? And if you think about it, grilled tuna tastes very much like steak, so the taco was probably very similar to a steak taco - with different condiments, to be sure.
Oh, and I could make some dirty joke about fish tacos here, but I'm feeling rather uninspired at the moment.

Tuna Fish Taco Filling
Easy to prepare and good. You will need corn tortillas for the tacos.
2 (6 ounce) canned tuna
3 medium tomatoes
1/2 onion, finely diced
3 small green chilies
1/2 cup mayonnaise
salt and pepper
4 servings
1. Remove seeds from tomatoes and dice.
2. Remove seeds and veins from the chile and finely dice them.
3. Mix the tomatoes, onion, chile, mayonnaise and tuna in a bowl.
4. Season withsalt and pepper to taste.
5. Warm thetortillas and fill your tacos.

I don't think they mean tuna fish like the kind you get in the can. A lot of Mexican restaurants serve fish tacos...some kind of grilled fresh fish (not usually tuna, probably flaky white fish like halibut). They can be really good!

I was grossed out by thinking about seafood tacos in general, but some of my mexican employees love them! Give it a try if you are adventurous!
