Tell me how many are there, and list it out. The most crucial thing i need to know is what is all each made off (raw material).......like vodka from potato. rum from grapes (if iam right).....

The answer will depend upon whether one is a "splitter" or "lumper" (to use taxonomy vernacular). If one is a "splitter, then Fred is right in saying "as many as the human mind can imagine". Does one for example consider Irish, Scotch, bourbon, etc whiskeys to be different drinks (a whiskey connoisseur probably would probably even subdivide the Scotches into Single Malt and Double Malt). The situation with beer is even more complex with new and different beers (wheat, Lager, Porter, Amber, Light, Dark, etc) that even differ among different breweries producing them. The varieties and vintages of wine (even just among those produced from grapes) is staggering and it could probably be a full time effort to become and stay knowledgeable with them.

Beer - take your pick, but usually made from Barley hops
Whiskey - Jack Daniel's is made from corn, but could be anything
Rum - Molasses or Sugar Cane
Vodka - Potatoes
Wine - Variety of grapes and other fruits (Sangria is made from a mixture of citrus fruits)
Champagne - Grapes, like wine and carbonated
Cogniac - distilled wine
Shnops - whatever you want to make it out of...

Alcoholic beverages can be made out of whatever you want to make it out of...so you know what you are drinking, it's what happens when bacteria start breaking down the sugars in the material. The alcohol is the biproduct of the decomposing process.

they are all made from plant sugars and converted to alcohol by yeast.

any plant can be used, the higher sugar content the more alcohol.
It can then be distilled to remove water and increase alcohol % and flavoring added like herbs, cream ...

so as many drinks as the human mind can imagine
