It is not the batter ingredients that make fried foods crunchy. It is the temperature of the oil that you use. To make really nice , crunchy fried foods, use pure Peanut oil and take the temperature to about 385 degrees f. Do not put in so much raw food in the cooking oil that the temperature drops. The food will sink to the bottom of the cooking pot and as soon as it floats, it is done. Remove the food and drain the remaining oil on paper towels. Make sure it is served hot.
Be careful when cooking with hot oil. Do not put too much in at one time.

a crunch onion ring calamari and such is from how long you have them in a deep fryer or in oil, I cannot say how long it would take for them to be more cruchy on the outside or anything however.

You don't add anything to the batter. You batter them and then roll them in cracker meal or corn meal.

after you batter it coat it in panco bread crumbs (japanese bread crumbs)
