there are lots of no cakes recipe out there my teacher in our coking lessons says that you can bake a cake without eggs.. like carrot cake:
11/2 cups all purpose flour
1 cup granulated sugar
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 cup coarsley shredded carrots
3/4 cup water
1/3 cup corn oil
1 tsp vanilla

heat oven 350 degrees.mix dry ingredients together and stir to blend.pour into an ungreased 8 or 9 inch baking pan bake 25 to 30 min. cake is good without icing but you could add icing or cool whip on top but if you don't want carrot cake just a ckae without egg you can substitute 1 table spoon soy floor and 4 table spoon of water or maybe......

you can try a crazy cake that is popular when depresion:

3 cups all purpose flour
2 cups white sugar
1 teaspoon salt
2 teaspoon baking soda
1/2 cup unsweetened cocoa powder
3/4 cup vegetable oil
2 tablespoon distiled white vinegar
2 table spoon vanilla extract
2 cups cold water

sift flour,sugar,salt,soda,cocoa together into a 9x13 inch undergreased cake pan.make three wells pour oil into one well,vinegar into second and vanilla into third well with fork

bake 350 degrees F (175 degrees c) for 30 to 40 min, or until tooth pick inserted out come clean.frost with your favorite icing

a million/4 cup of Apple Sause works as a million egg. I continuously use them while making pancakes :] 0.5 of a banana works as nicely yet would over take the style of the cake and make each little thing style like banana bread, only no longer as solid.... i'd recomend employing a million/4 cupof apple sause in step with egg.

Instead of an egg for a cake or other mix you may use a Tablespoon of regular mayonaise

Yogurt, mashed banana, applesauce, pumpkin, or other pureed fruit or vegetables are good replacements for eggs in muffins or cakes.

i suppose you can substitute eggs with a tofu product like
SILKEN which has a creamy consistency.this way you still get
your protein and low cholesterol.
