Dried meat, Beef or Deer or any kind of Meat is cut very thin so bugs cannot lay eggs into jerky. It is dry-ed on racks outside. After that it is eaten in 1860's for trail drives and American Indians.

beef jerky is beef that has been salt dried and smoked...
it has been around a long time...
when I worked in outback Australia we used to make this by salting or 'corning' the meat then hanging it on hooks over the fire place...to smoke it..
In other words it is beef bacon...

great stuff. made from beef. better stuff made from buffalo. around here they try to pass of this thing made from salmon as a kind of jerky, it's not.
