the alcohol, however you cannot make regular vodka burn. it may light if you are good, but it will go out very soon. you need something 99 proof or higher. it has to be 50% alcohol. bacardi 151, everclear, sometimes even rumpleminze will light. if you want a regular drink to flame, usually the bartender pours a tad 151 on the top.

The ethanol (ethyl alcohol) is what burns and here's how and why...
Alcohol is the name given to a group of moloecules called hydrocarbons. The alcohol present in drinks is ethanol. These hydrcarbons contain many chemical bonds and in turn a large energy potential. When the the alcohol is lit by a another sourse of energy(lighter) the bonds break rapidly releasing energy inthe form of heat. Fossil fuels such as petroleum and coal contain hydrocarbons. As a point of interest internal combustion engines do not efficiently harvest the energy contained in fossil fuels and hence pollute the atosphere. In a simiiar comparison our bodies extract energy from similiar bonds such as carbohydrates(sugars) and lipids(fats).

The alcohol in booze is a type of alcohol called ethanol alcohol (as opposed to isopropyl alcohol which is the type of alcohol in rubbing alcohol). Anyhow, ethanol is flammable but most booze is 40% ethanol or less, so it doesn't have enough total ethanol to burn. However, anything with a higher percentage can possibly be flammable.
