Generally it's because your blood sugar levels dip, so your body craves sugar - you eat chocolate or whatever which gives you a sugar high, but then crashes right down again and you crave more sugar. The best thing you can do is try to eat foods which release sugar slowly so that you don't have these dips - look up the glycaemic index diet on the internet, it will tell you which foods have a low glycaemic index and you should eat these to keep your sugar levels more constant.

Ive heard that most bad carbs (sugar mostly) is additive, literally. you have to almost completely stop eating them for two weeks or so to get it out of your system so you dont crave it phisically anymore. Thats what they do on the south beach diet.

Do you think your eating habits have anything to do with depression or anxiety? Mine do and since I've been on an antidepressant my eating habits are REALLY changing for the better. Now I eat to solve HUNGER, not cravings.
