Panbroiled Steak with Whiskey Sauce
Yield: 4 servings

1 lg 2-inch-thick steak, or 4
-small 1-inch-thick strip
-steaks
1 tb Black pepper corns, coarsely
-crushed
3 Garlic cloves, minced
1/2 ts Coarse rock-salt or 1/4
-teaspoon table salt
WHISKEY SAUCE
1/4 lb Butter
2 tb Chopped onion
1 Garlic clove, minced
2 tb Whiskey
1 tb Worcestershire sauce
1/2 ts Dry mustard
1 ds Tabasco
Pour off any fat from cooking the steak. Melt butter in the same
skillet over low heat; add onion and garlic and cook slowly until
soft. Add remaining ingredients and simmer for a minute or two. Pour
over steaks.
Trim excess fat from outside the steak. Press crushed peppercorns and
garlic into both sides of the meat and let stand at room temperature
for 1 hour.
Heat a cast-iron skillet over high heat. Grease the bottom of the hot
skillet with a piece of fat trimmed off the steak. Toss in about half
of the salt. Sear the steak or steaks quickly on one side, then lift
out, add the remaining salt to the skil- let, turn the steak, and
sear the other side. Reduce the heat to medium and cook the steaks as
desired. Remove to a warm platter. Pour sauce over steaks and serve.
Island Black Bean & Rice Salad
Yield: 4 Servings
1 Ripe Avocado
Juice of 1 large lime
3 c Rice, cooked
1 cn (15oz) Whole black beans,
-drained
4 Green onions, minced
2 tb Cilanto, minced
2 tb Olive Oil
Salt And Pepper
Description:
A cool treat that's also a breeze to make.
Instructions:
Peel, pit, and dice the avocado and put it in a small
bowl. Pour the lime juice over and toss to evenly
coat the avocado.
In a large bowl, combine the rice, drained beans,
green onions, cilantro, olive oil, salt and pepper.
Stir to evenly mix, add the avocado and stir gently to
incorporate. Taste the salad for seasoning and chill
until ready to serve.

What type of dinner are you having? A formal sit down dinner, or a buffet style where people will casually eat in groups? For buffet styles try to stick with foods easy to serve, and easy to eat anywhere. I usually make a dish were I cut up pieces of cooked chicken breast, and then mix it with brown gravy (just a small amount to coat) and stuffing. Then I sprinkle cheese on the top, and bake the entire thing for about 20 minutes. It's easy to serve because you just need a large spoon for serving, and no need to cut anything up. You could serve that with salad, and rolls, and something of a vegetable on the side.
You might want to give people options and also have a meatless pasta like baked ziti if people do not like chicken.
If you are having a formal sit down dinner try something more impressive, like leg of lamb, or a roast beef dinner. But again, always have options and be aware if any of your guests have preferences ahead of time. Some people may have allergies, or be vegetarian, etc.

Spaghetti and salad for a large group. Lasagna and salad for a smaller group. The sauce can be made ahead of time as well as the salad. when all guest have arrived you will know approximately how much pasta to cook, the left over sauce can be frozen for use later. Make your salad but have a couple heads of lettuce on hand to break up in the bowl if more people come than expected. Have a variety of dressings available to the guests. Have all your bread pre-buttered and ready to heat, bread can also be frozen for later use. This meal keeps the kitchen mess at a minimum and you with your guest longer. Also clean-up is easier on the cook.

Lasagna, salad, garlic bread with Parmesan, wine, and a easy but pretty dessert. Everything can be done ahead of time, and I have more time for the guests. All I have to do is light the candles, pop the garlic bread into the oven, and pour salad dressing on the salad. I make some iced tea for the fridge if someone would not like the wine, and my choice of dessert would be raspberry gelato, in a pretty glass bowl, with a plate of light cookies. Even the gelatto could be scooped in advance.
Have a nice dinner party.

Roast Chicken, turkey or capon depending on the size of the party! I make the stuffing the night before, stuff the bird just before it goes in the oven, and drape bacon slices over the top. By the time guests arrive the house smells fabulous and I just add a salad and rice or potatos. I also save the gravy from the LAST bird roasted, and freeze it, so I don't have last-minute gravymaking to worry about.

Taco's! Homemade ones .the tacos i make is made this way--------- I have a big family ,and tacos go along way.I take 5#s of ground beef,2 rolls of chareso (mexican sausage),cook until ground beef is no longer pink,add the sausage and cook through. I put pre fried beans in my meat mixture(a large can),but you can also serve the beans on the side.Serve with lettice,onions, tomatoes,goats cheese(or what ever kind of cheese you like),sour creamand any kind of salsa you like.I use flour and corn tortillas,heat the flour ones up in microwave just until warm. I fix the corn ones in hot oil .

Tamale Casarole!
Put 1 cup cooked white rice in bottom of a 13 by 9 pan. Put sliced cheese on top. Put 1 can kidney or chili beans on top of that. put more sliced cheese on top. put diced onions and put 2 large cans of tamales on top. Make sure you take off the wrapping on the tamales! Put another layer of sliced cheese on top. bake at 375 for about 20-25 minutes. It's awesome!

Chicken and Sausage Jambalaya. Great to serve a crowd. Just add crusty bread and maybe salad. Serve ice cream for dessert.

Usually when I have company over I make pasta. It contains bow-tie pasta, shrimp or chicken (whichever one i feel like using), and some other good stuff. It's a really tasty dish people always want the receipe for.
