My mom and I want to find something out of the ordinary to cook for dinner, yet reasonable and not too crazy.

pupusas! its like a cheese or meaty filling inside a flat grilled tortilla. so good!

Try fish tacos.
Get any white meat fish. Halibut or cod is best.
Salt and pepper (or use Old Bay) after paper toweling dry the boneless and skinless fish fillet.
Dip fish in egg and water mixture then cover with bread crumbs or saltine crackers finely crumbled.
Pan fry the fish in olive oil.
Brown flour or corn tortillas in a dry fry pan.
Put the cooked fish with shredded cabbage and either tartar sauce, Italian dressing or a favorite salad dressing on top of the cabbage and enjoy.

Verenike Casserole
(verenike is a german food, and this is a WAY easier version of it in casserole form. Everyone who I have served it to is a big fan!)

8 oz. egg noodles, cooked and drained

Mix together: 1/2 package dry cottage cheese, 1 egg, slightly beaten, 1/2 tsp. salt, 1/2 tsp. pepper. 2 T. sour cream; mix with noodles.

Cut cooked ham (I usually buy ham steaks) into bite sized pieces and brown slightly in skillet with butter and onion. Reserve drippings in skillet for gravy.

For gravy, mix 2 T. corn starch and 2 c. cream. Add 1 1/2 T. melted butter to the skillet with drippings and heat gravy mixture over medium heat until it thickens. Add ham chunks and season with salt and pepper.

Mix 1/2 of the gravy with the noodle mixture and bake in 8x8 inch pan at 350 for 30-40 minutes. Serve remaining gravy with casserole.

If you can't find dry cottage cheese, just use regular and drain the juice out. (maybe even squeeze it out)

Main Course: Cheese fondue, instead of Kirsch use white wine, with a variety of filled pasta dips.

Dessert: Baked Alaska, using honeycomb ice cream.

other than that: soft french cheese baked in pastry, plum chutney and honey-rosemary ice cream - had it in a german fusion restaurant, best dessert in the world!
or a chutney from caramelzed strawberries with chili and thyme - great on a ham sandwich!
