I want to make a coconut macadamia nut brittle, but it will make too much. Can I freeze the leftovers or would it get gummy?

INGREDIENTS:
1 cup flaked coconut
1 cup white sugar
1/2 cup corn syrup
4 ounces chopped macadamia nuts
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

DIRECTIONS:
Spread coconut evenly over a buttered baking sheet.
In a medium microwave-safe bowl, combine sugar and corn syrup. Microwave on high 3 minutes. Stir in nuts and microwave 4 minutes more. Stir in butter and vanilla and return to microwave for 1 minute. Stir in soda until light and slightly foamy. Pour over coconut in pan. Let cool until firm, 1 hour. Break into pieces

Yes. It will sweat when you thaw it out though. You may not need to freeze it at all depending on how long you plan on keeping it. It should store in a tin cookie container or airtight glass jar for several months and be ok.

First make sure the brittle is cooled and then wrap it in plastic wrap then put into a Ziploc bag and throw into your freezer.
This method works for everything from salmon, meats, cheese and lots of things I buy in bulk but only need smaller portions of it.

it should freeze fine for several months, at least. should be able to store it in an airtight container in the pantry for a long time, too, since the sugar is a preservative.
